Mango Tokku/Chutney

Mango/mavinakai /raw mango tokku/chutney is one of the side dish that goes well with curd rice/plain rice or with any other main dishes for spicy lovers. It is good to have them for good digestion.

The season is here and here we go with one of the best tokku/chutney in Udupi style.
This Mango chutney is one of the handy dish. We can mix this tokku with plain rice and turn it as Mango sasive chitranna./Savoury Spicy Rice.
 I have used raw mago, green chilly, red chilly powder, methi and mustard seeds.
Let us see the recipe now :

Things Needed :

Raw Mango : 2 . (Savoury mangoes)
Green chilly : 2 to 3 
Red chilly powder : 1 Tablespoon.
Mustard seeds : 1 Tablespoon
Methi seeds : 1/4 Teaspoon
Salt : 1 to 1 1/2 Tablespoons
Ingh/Asafoetida : A little 
Oil : 1 Tablespoon

Method :

1. Wash mango and clean it with a clean towel. See that all the moisture goes off.
2. Grate it and keep it aside.

3. Wash and slit green chilly and keep it aside.
4. Dry grind mustard seeds and keep the powder aside. ( 1 Tablespoon full).

5. Keep a pan on the fire and heat. Add oil and mustard seeds. ( 1 Teaspoon). Let it splutter.
6. Add slit green chilly and mustard seeds. Fry for a minute. Add Asafotida.

7. Add grated mangoes and a pinch of turmeric powder. Mix it well.
8. Add salt and stir till it changes its colour and thickens.
9. Add red chilly powder and mustard seeds. Stir till the oil oozes on the top and the sides.

10. Stir for another 3 to 4 minutes and put off the gas. Let it cool slowly. (Let it be in the pan til it cools down).

11. Shift the ready Mango Tokku to a clean bottle. 
12. Serve ready Mango chutney whenever you wish.

Note :

Adding more oil is optional. It should be cooked well without adding any water. Even a drop of water /moisture makes the chutney to spoil spoon. Adding more chilly is optional. I have used coconut oil to prepare this tokku.  Use of Til /Sesame oil is optional.. You can keep this tokku for at least 3 to 6 months in fridge. It is always better to keep this tokku in a fridge. ( Some time by mistake using a wet spoon makes the tokku to for fungus. Be careful and use dry spoon.

Time : 10 Minutes.
Serves : As you wish.

Mooli -Sambrani Parata ( Radish - Chinese Potato Parata)

Mooli/Moolangi/Radish and Sambrani combination Parata is an excellent dish to enjoy. Mooli /Radish is good for easing the digestion and Sambrani/Chinese Potato/Wild potato is full of fiber.


 You all know about preparing Mooli Parats. Yes it is the same mooli parata which we prepare. Grating and adding mooli gratings to wheat flour and mix it and roll it. But here it is a little more work for you. How about stuffing some dry curry and rolling out as parata?

 It is always the case with me that I prepare some dry curry for lunch ( I love dry curries with plain rice 😉  and when one portion is left and is used for parata stuffing and it turns out to be yummy. You need to know about the vegetable You use. So that your end product will be surely liked by your people. ( Remember that brinjals, cucumber etc can not be stuffed easily and I do not know about the taste because I never try them. They are good to have as side dish).
I have used Sambrani dry curry , Radish, coriander leaves, garam masala and wheat flour for parata.
Let us see the recipe Now :

Ingredients :

Sambrani /Chinese Potato /Wild Potato : 1 Bowl
Mooli/Moolangi/Radish : 1 ( Medium sized)
Ghee : 1 Teaspoon
Coriander leaves : 1 Bundle (Small)
Garam Masala : 1/2 Teaspoon
Salt : As required
Wheat flour : 2 to 3 Cups.
Oil : 4 to 5 Tablespoons

Method :

1. Wash and scrape out the outer layer of Mooli and grate it. Wash coriander leaves and cut into small pieces.

2. Smash Sambrani/Wild potatoes and smash it slightly. Keep it aside.
3. Take a big bowl and put wheat flour, ghee, grated radish, cut coriander leaves, salt and garam masala. Mix all the ingredients nicely.
4. Add required water and prepare the dough. Keep it aside.


5. Divide the parata dough into small portions. Keep some dry flour to roll the parata.
6. Take a small portion and  roll it slightly.
7. Put a tablespoon of  Sambrani dry curry (half smashed) and pull all the sides to middle and make like a ball shape. (Stuffing).
8. Dip this stuffed dough in dry wheat flour and roll slowly and give a round shape.


9. Keep a tava/pan on the fire and heat. Clean it with tissue or clean towel.
10. Put rolled parata and put some oil around. (A teaspoon).

11. Cook on both sides. ( Cook parata on low and medium flame).

12. Now the Hot Mooli -Sambrani Parata is ready to serve.

13. Repeat the same with remaining dough and the curry.

14. Serve " Mooli -Sambrani Parata with the side dish you have prepared and a cup of curd.

15. We had " Mooli - Sambrani Parata " with coconut chutney and curd.

Note :

Do not add much water while mixing mooli gratings. Add water slowly and little by little to prepare the dough. Smashing the dry curry completely is optional. ( I just smashed a little and while rolling it is completely smashed. Roll the parata slowly or it might stick to roller. Adding more /less oil is optional. Do not add much spice while preparing the dough. The stuffing adds to the taste. Adding any other spice like chat masala, amechur powder or pav bhaji masala is optional.
Time : 40 Minutes
Serves : 3 to 4  (According to the size ).

Preparation of Sambrani Dry curry 

Wash and remove all the mud part from Sambrani and pressure cook for 5 to 6 minutes with little water. (Same as cooking potatoes). Remove the outer layer and wash sambrani nicely.
Keep a pan on the fire and heat. Add mustard seeds, jeera and ingh. Let mustard splutter. Add curry leaves. (Cut into thin). Add cooked Sambrani and stir nicely. Add turmeric powder, salt and chilly powder. Let it cook on low flame for 5 to 6 minutes. Stir in between. Add cut coriander leaves and mix it well. Sambrani/wild potatoes dry curry is ready to serve. It goes well with curd rice and as a side dish.

Carrots -Coriander leaves & Avalakki Cutlets

Cutlets are one of the yummy snack that most of the people and kids love it.  They are spicy, tasty and stomach filling. They are done in many ways. I have just tava/pan roasted the cutlets, used very little oil to shallow fry.


I have used wheat bread crumbs, carrots, coriander leaves, avalakki /poha/flattened rice to give a good bind. Cooked on tava using little oi.
No Onion and No garlic is added here.
Green chutney is also done at home and it is an easy dish.
Let us see the recipe now :

Things needed :

Carrots : 2 +  2
Coriander leaves : 1 small bunch
Bread crumbs : 1 Small bowl. ( 4 to 5 slices)
Garam Masala Powder : 1/2 Teaspoon
Jeera Powder : 1/2 Teaspoon
Salt : As required
Jeera : 1/2 Teaspoon
Ginger : An inch
Avalakki /Flattened rice/Poha : 1 Cup
Oil : 2 to 3 Tablespoons

Method :

1. Dry grind bread and keep it aside. (Including the sides).

2. Wash and remove the outer layer of carrots and grate 2 carrots. Cut green chilly into small pieces.
3. Wash and clean coriander leaves nicely. Cut them into very small pieces. Wash and remove the outer layer of ginger, wash it again and grate it.
4. Wash thick avalakki and remove  all the water.

5. Now take a big bowl. Add grated carrots, ginger, powdered bread and cut green chilly.
7. Add cut coriander leaves and washed avalakki. and the spices like jeera, garam masala powder and turmeric powder. Add required salt.

8. Mix all the ingredients nicely and keep it aside. Do not add any water. It mixes well with avalakki/poha and bread crumbs.
9. Kneed the mixture nicely and divide them into small portions.

10. Take small portion and give a desired shape.
11. Keep a pan on the fire and heat. Add some oil and place the cutlets you have done.
12. Cook them on low flame till they turn slightly golden brown. Turn the other side add oil and cook.

13. Remove from the pan and serve hot cutlets as you wish.

14 We had the cutlets with like this.
a)  Cutlets with carrot's gratings and spicy sweet and spicy chutney.

b) Cutlets with carrots and pomegranate

c) Cutlets with little fried cornflakes


d) Cutlets with all the above mixture and curd.

Note :

Little carrot gratings should be kept aside for serving with cutlets.
You can deep fry the cutlets. (optional). You can use more oil and shallow fry it. (optional).
You can also use minimum oil and cook on low flame. (optional).
You can also use lots of other vegetables like beans, peas, capsicum. (Optional).
I have done with only carrots and coriander leaves. Use of bread slice edge is optional. ( I have used).
Use of other spices like chat masala/amechur powder or any other masala is optional.
Use of more chilly/red chilly powder is optional.
No potato is used here. Use of potatoes, onions or garlic is optional.
Time : 30 Minutes.
Serves : 3 to 4. ( Shape ans size matters).
Type : Indian snack.

Green chutney preparation :

Clean and wash coriander leaves, pudina/mint leaves and green chilly.
Grind coriander leaves, mint leaves, green chilly, 3 to 4 soft dates,  little tamarind and salt with minimum water. Add water whenever you want the chutney to be little more liquid.

Raw/Tender Jack Dry Curry

Tender Jack/ಹಲಸಿನ ಕಾಯಿ is one of the seasonal vegetable. I have prepared dry curry using raw/tender jack. It goes well with almost all the main dishes like plain rice, chapatis or rotis.


Using tender jack in curries and making even papads once it is fully grown (just before turning to fruit), is a practice in Dakshina Kannada, Udupi and Malanadu ares. Tender jack is loaded with many healthy properties.
I have used this tender jack in dry curry and is one of the traditional dish from Udupi.
During this Jack season most of the people do prepare varieties of dishes with this tender jack.
I prepared this curry with mustard seeds, red chilly, coconut and tamarind.
Let us see some benefits of using Tender Jack in our Menu.
Raw/tender jack is full of fiber and low in sugar.It is very high in insoluble fiber. It helps to reduce the cholesterol and good for diabetes.
You need to cut the outer layer of raw jack and cut into two pieces. Rub oil to your hands and the knife you use and then remove the oozing gum from the middle part of the vegetable. Cut them into small pieces remove the hard inner part and put it in a big bowl of water. Soaking them in water helps the jack pieces turn black.

Things Needed : 

To Cook :
Raw jack pieces : 1 Big bowl
To dry grind : 
Mustard seeds : 1 Teaspoon
Coconut : 2 to 3 Tablespoons
Tamarind : 1 small marble size
Chilly Powder : 1 Teaspoon
To Add :
Ground coconut mixture
Mustard seasoning with coconut oil
Jaggery : 1 Tablespoon
Salt : As required

Method :

1. Remove the outer layer, cut raw jack into two pieces. Clean up the inner oozing gum with a help of paper. (Normally news paper is used)

2. Remove the inner hard part and cut them into small pieces. Put the pieces in a big bowl of water.
3. Wash them nicely and cook with little water in a pressure cooker for 2 to 3 minutes.  ( It should not be over cooked).

4. Let it cool. Remove the cooked pieces from the cooker and put it in a bowl. Make them as small pieces by using your fingers. (It turns as separated rakes). Keep it aside.

5. Grate coconut and dry grind with 1 teaspoon of mustard seeds, chilly powder and tamarind.
6. Dry grind the mixture and remove it from the mixi jar.

7. Keep a pan on the fire and heat. Put 1 tablespoon of oil and add half teaspoon of mustard seeds. 1/2 teaspoon of urid dal.
8. Let mustard seeds splutter. Add curry leaves and slightly smashed raw jack pieces.
9. Add salt, turmeric powder and jaggery. Mix all the ingredients nicely.


10. Add ground coconut, mustard seeds mixture and mix it nicely.
11. Let it cook on low flame and let all the moister disappear.

12. Shift " Raw /Tender Jack Dry Curry " to a serving bowl and serve.

Note : 

Do not over cook raw jack pieces. It does not taste good. Just 2 whistles are perfect. Adding any other masala is optional. Taste differ. I have used coconut oil. Use of any other oil is optional. Use of jaggery is optional.
Time 30 Minutes 
Serves : 4 to 5.
