ಆರೋಗ್ಯಕರ ಶುಂಠಿ - ನೆಲ್ಲಿಕಾಯಿ ಲೇಹದ ತಂಬುಳಿ


This is one of the easy tambuli Which you can do it easily. 
You must see my previous Leh chapter. 
Ok let us see how I did it.
It is very simple, healthy, yummy and will really save your time.
Take small portions of Leh, if you have not divided them as small ball size , (lessor than small gooseberry ), take halp tsp of this Leh and put it in a cup of curd. 
Add salt and mix it well. 
Now season with a tsp of ghee, little jeera/Cumin seeds and ingh/Asafoetida.
Add the seasoning and serve with hot rice. 
It helps to digest the food easily, keep you warmth and take care of your health.
Please do try and enjoy.
Note 
You can use butter milk instead of curd. But curd tambuli taste better.

Raw Mango Tambuli

Raw Mango Tambuli is one of the side dish. Tambuli is nothing but butter milk curry and is normally eaten at the beginning of the food during lunch. You can also use tambuli as drink.


It is healthy, soothing, digestive and yummy side dish. Here I have tried Raw Mango Tambuli and it suits to all age group. You can use it as drink or a side dish with rice.
I have used Raw Mango gratings, ghee fried jeera, pepper, little grated coconut and 1/2 cup of curd.
Let us see some benefits of Raw mango in our diet. 
Raw Mango helps to protect us from dehydration. It boost energy and good for heart. It has a rich source of nutrients. It has a good source of anti oxidant properties. Good for digestion. It is good for eye health. It is rich in Vitamin A, Vitamin E, Vitamin B6, Vitamin K and Vitamin C. It contain soluble fiber and good for people who suffer from constipation. It has minerals like Iron, copper, potassium and magnesium.

Ingredients :

To Fry :
Ghee : 1/2 Teaspoon
Jeera/Cumin Seeds : 1/2 Teaspoon
Pepper Pods : 1/2 Teaspoon
Green chilly : 1/2
Mango gratings : 2 to 3 Tablespoons
Ingh/Asafoetida :  A little
Curry leaves : 6 to 8
To Grind :
Coconut gratings : 2 to 3 Tablespoons
Fried Ingredients
Water : Very little (1/4 cup or little more).
To Add :
Salt : As required
Curd /butter milk : 1 Cup


Method :

1. Wash and grate mango and keep the gratings aside.

2. Grate coconut and keep it aside. Wash green chilly and curry leaves and keep it aside.
3. Keep a pan on the fire and heat.
4. Put ghee, jeera and pepper. Fry on low flame.
5. Add Green chilly and fry. Add grated raw mango and mix it well. Add curry leaves.

6. Put off the fire and add coconut. Let it cool.
7. Grind it with required water once it is cooled. Take out  the mixture to a bowl.


8. Add curd and required salt. Mix it nicely.


9. Add jeera seasoning done in 1/2 tsp of ghee and serve with other dishes.



10. Yummy, healthy, easy and seasonal Raw Mango Tambuli is ready to serve.



Note :
Do not use much ghee. Do not add more chilly. Tambuli should be mild and pepper pods adds mild spice to Tambuli. Add fresh coconut gratings to get Ghama Ghama Tambuli. Do not use dry coconut. It changes the flavour of the tambuli and the taste differ.
You can use butter milk instead of curd.
Time : 15 Minutes 
Serves : 2 to 3.

Elemuri /Elemuni Soppu Tambuli

Elemuni / Elemuri/Elevarige ಎಲೆಮುನಿ ಅಥವಾ ಎಲೆಮುರಿ ಸೊಪ್ಪು are loaded with medicinal values and it is good to have in our diet.


I got these leaves from one of my relative who has the plant.
The botanical name for this plant is known as Senna accidentalis or Casia accidentalis.
I tried Tambuli and Chutney, using these leaves and it is an excellent herb dish. It goes well with plain rice. (Tambuli) and chutney can be served with chapatis, rotis, rotti or any other main dishes.
Tambuli is prepared using curd or butter milk. It is one of the signature dish from Udupi and served in the beginning of the lunch. Tambuli is mixed with rice. It helps to digest the food well and keeps you healthy.
Tambuli is prepared using very simple healthy spices like jeera/cumin seeds, pepper, ingh and fresh coconut.

Ingredients :

To Fry :
Ghee : 1/2 Tsp
Jeera / Cumin Seeds : 1/2 Tsp
Pepper Pods : 5 to 6
Green chilly : 1
Coconut : 2 Tbs
Ingh/Asafoetida : A little
Elemuri leaves : 1 Handful
To Add :
Curd :  3 to 4 Tbs
Salt : Required Salt.
To Season :
Ghee : 1/2 Tsp
Jeera/Cumin Seeds : 1/2 Tsp
Asafoetida : A pinch
Curry Leaves : 3 to 4

Method :

1. Pull out the leaves from the stick.

2. Wash it nicely and keep it aside. Wash curry leaves and a green chilly.

3. Grate coconut and keep it aside.
4. Keep a pan on the fire and heat. Add ghee, jeera and pepper pods.
5. Fry for 10 seconds. Add green chilly and curry leaves. Fry a little. Add ingh.


6. Add Elemuri leaves and fry nicely till they turn crisp. ( On low and medium flame, do not burn).


7. Put off the fire and add coconut. Mix all the ingredients well.
8. Grind it with little water once the ingredients are cooled down.


9.Shift it to a serving dish. Add salt.

10. Add 1/2 Cup of curd. ( 4 to 5 tbs). Mix it well.

11. Add jeera and curry leaves seasoned with ingh and ghee.


12. Serve as one of the side dish with lunch.



Note :
One should use tender Elemuri /Elemuni/Elevarige Leaves. Use fresh leaves.
Tamubuli should be mild. Having Fresh coconut is always good for health. It is rich in good cholesterol and contain healthy properties.
Tambuli can be added with water and can be served as healthy drink.
Time : 20 Minutes 
Serves : 3 to 4 .

Ondelaga / Timare Tambuli

Ondelaga /Timare as we Udupians call it is one of the herb family plant. It is filled with loads of medicinal values. I have been preparing this tambuli for so many years and I think missed out publishing it here.



Ondelagav / Gotu Kola is called as Centella  Asiatica.
ತಿಮರೆ /ಒಂದೆಲಗ or Gotu Kola is called as Bramha Manduki in Hindi, we call it as Ondelaga or Timire, (Kannada Language), in Malayalam it is called as Kodangal / Muyalcheyi, Marathi - Karinga  /Karivana. In Tamil Vallarai and in Telugu - Saraswataku / Brahmi. In Urdu it is known as Brahmi Buti.
This is not a Brahmi leaf, but still people call it as Brahmi since it is full of medicinal herb. Even in other countries like, India, Malaysia, China, Africa,  Shri Lanka, Vietnam and other Asian Countries. It is one of the ancient medicinal herb used to cure some of the diseases.
Gotu Kola is used for preventing hair loss, it also heals the wounds fast. It is good for skin care and soothe nervous disorders. It helps to in respiratory issues. It is filled with antioxidant properties and helps in many ways. (Removal of scars). It helps to reduce the wrinkles. It relieves the Psoriasis symptoms. It has anti- inflammatory properties and it fight bacterial infections. It helps in reducing the swelling and pains caused by inflammation. It helps in preventing Nervous Disorders. It helps in reducing the stress. It boost memory power. It helps to detoxify the body and regulates the blood pressure.
Please Note :
Pregnant women and people who are suffering from stomach upset please do not use the leaf.

This Tambuli is from Udupi and Dakshina Kannada style.
We normally do not fry or roast this leaf since all the good medicinal value is said to be disappeared once you fry/dry roast it.
Tambuli is a curd curry, actually it is done with butter milk after churning the butter. Butter Milk is naturally good for health since there is no fat in it.
Ondelaga Tambuli is heavenly to have at the beginning of the lunch. Tambuli is normally not prepared in the night, since the savoury taste causes the bad dream at night.

No Garlic or Onion is used here. This is one of the traditional dish of Brahmins/ Pure vegetarians. 

Things Needed : 

Ondelaga/Timire /Gotu Kola : 1 Handful
Fresh Grated Coconut : 2 Tablespoons
Curd /Butter Milk : 1 Cup
To Fry :
Ghee : 1/2 Tsp
Jeera : 1/2 Tsp
Pepper Pods : 1/2 Tsp
1 Green/Red Chilly
Ingh/Asafoetida : A pinch
Curry leaves : 5 to 6 (Optional).

To Season :
Ghee : 1/2 Tsp
Jeera /Cumin seeds : 1/2 Tsp
Ingh / Asafoetida : A little
Curry leaves : 4 to 5
Salt : As required

Method :

1. Wash and clean Ondelaga Leaves. Cut the leaves and keep it for using it.


2. Grate coconut and keep it aside.


3. Keep a pan on the fire and heat. Add ghee, jeera, 5 to 6 pepper pods and fry nicely.
4. Add ingh and curry leaves. Put off the fire and put ondelaga leaves, grated coconut and mix it nicely.

5. Grind it with required salt and very little water. Shift the ready ground tambuli to a serving dish.

6. A cup of curd and mix the tambuli nicely.

7. Add jeera seasoning fried in ghee.


8. Serve with plain rice.

Note :

Do not use the curd to grind tambuli. It should be either with water or butter milk. Use of curd is better to have good taste. Adding chilly while frying is optional. Tambuli should be mild spicy. Do not add more chilly.
Time : 15 Minutes
Serves : 2 to 3

Pomegranate Leaves Tambuli

Pomegranate Leaves Tumbuli 


Pomegranate fruits are filled with nutritional values. That every one knows about this fact. But did you know that even the leaf, peel is also used for treating so many diseases. Here is a dish,  I have used Pomegranate Leaves and prepared Tambuli/Curd Curry. It is not at all new. This is one of the traditional dish of our South Canara./Dakshina Kannada, Malenadu regions. Tender Pomegranate leaves are used to prepare this tumbuli and it is very beneficial to all age group.
My  doddamma used to dry even the peel of pomegranate and use it whenever needed. We used to have this Tumbuli now and then and stay healthy.

Most of us remember when we have loose motion we do drink kashaya  of pomegranate peel. This is a tip too.
I remember my doddamma used dry pomegranate peel and store it for any time of the year. And it is used for tumbuli or kashaya, whenever needed. In those days we never used to get pomegranate around the year like now. We used to get pomegranate only during its season and more often we used to get this fruit very rarely. But I am not sure how many of us use the peel.
Tumbuli is a curd curry prepared using jeera, pepper pods, very little ghee and curd. This curry eases our digestion and help us to be very comfortable after food. Tamubuli is one of the traditional dish of South Canara. It is normally done with butter milk which is very light and healthy. Varieties of healthy turmbulis serve the purpose of a dish and take care of our health.
The tender leaves of Pomegranate are used for tumbuli, that is one of the traditional dish served in the beginning of the lunch.
Let us see some benefits of having Pomegranate leaves in our diet.


These pomegranate leaves are from our garden. 

The leaves are good for digestion. It helps in easy digestion and is used for trating abdominal pain.
They are used for treating insomnia. Leaves are good for curing cough and treating jaundice. The Kashaya or tea prepared from pomegranate juice is very good for treating dysentery. The dry powder of pomegranate leaves is good for treating boils on our body. It is also good for mouth ulcer. You can also use it for wrinkle free skin.
Let us see the recipe now :

Things needed :

Tender leaves of pomegranate : 1 handful/
Jeera : 1/2 Teaspoon
Pepper pods : 4 to 5
Ingh / Asafoetida : A little
Green chilly /Red chilly : 1
Salt : As required
Curd or Butter Milk : 1 Cup
Ghee : 1/2 Teaspoon

For Seasoning :
Ghee : 1/2 Teaspoon
Jeera /Cumin Seeds : 1/2 Teaspoon
Curry Leaves : 4 to 5
Ingh /Asafoetida : A pinch

Method :

1. Clean and remove the leaves from the stem. (Thin stick). Use only the tender leaves.


2. Wash some curry leaves and green chilly. Keep it aside.
3. Keep a small pan on the fire and put l/2 tsp of ghee. Add 1/2 tsp of jeera/cumin seeds and 4 to 5 pepper pods.
4. Add slit green chilly and fry till jeera turns golden brown. Add ingh.


5. Add washed pomegranate leaves and fry for 2 to 3 minutes. Till it turns slightly crisp.


6. Put fried ingredients to a plate and let it cool.
7. Grate coconut and add the fried ingredients.
8. Grind it with little water till it turns paste consistency.


9. Remove it from the mixi jar to a bowl. Add required salt.
10. Add curd /butter milk. Mix it well.


11. Add ghee fried jeera - curry leaves seasoning. Shift it to a serving dish.


12. Serve with other side dishes for lunch.

Note :

Use only very tender leaves. Tambuli should be mild spicy. Use of ghee is a must to get the good taste. If you are using curd add 1/2 cup of water and dilute curd into buttermilk
Time : 10 Minutes.
Serves : 2 to 3.
