Fruits & Spicy Rava Rotti

This Fruits and Spicy Rava Rotti is some thing new and creation of my own idea. 


When I do prepare something its like what to change? What makes the food more interesting. How about adding this or that, so and so. Here is one such creation and that is Fruits & Spicy Rava Rotti.
I have used bottle gourd gratings, pomegranate seeds, apple gratings, coconut and little milk.
This rotti taste bit sweet and mild spicy. I have also used some spices like jeera/cumin seeds and chilly powder. The combination of fruits adds aroma to rotti.
Rotti is normally a favourite dish of many. Even I like any type of rotti and do prepare it as I like it. I am sure you too like it and really enjoy this yum yum rotti.
No onion or no garlic is used here. No sugar or jaggery is used here. It is the fruits give a very little sweet taste.
Let us see the recipe now :

Things needed :

Rava/Semolina : Medium sized : 2 Cups.
Bottle gourd :  1 Bowl. (1/2 of one medium sized bottle gourd)
Pomegranate seeds : 3 to 4 Tablespoons
Ripe Banana : 1
Coconut : 2 to 3 Tablespoons
Chilly Powder : 1/2 Teaspoon
Salt : As required
Milk : 1 Cup
Jeera/Cumin Seeds : 1/2 Teaspoon
Oil/Ghee : 2 to 3 Tablespoons


Method :

1. Wash and remove the outer layer of bottle gourd and grate it.

2. Remove the skin of banana and smash it nicely.
3. Grate coconut and keep it aside.
4. Take a big bowl and put all these grated coconut, bottle gourd and salt.
5. Add milk,  smashed banana pomegranate seeds, jeera/cumin seeds and chilly powder.

6,. Add rava and mix all the ingredients nicely.
7. Let it rest for 10 minutes.


8. Keep a tava on the fire and heat. Add a teaspoon of oil. Spread it around.
9. Take a handful of rotti mixture and spread it on the hot tava. (Let the flame be low while spreading the batter).
10. Put some oil on the top of rotti and cook on medium flame. Cover and cook for a minute or little more.
11. Turn the other side and cook for a minute.



!2. Now the Fruits and Spicy Rava rotti is ready to serve. Serve with the side dish and a spoon of ghee on the top of hot rotti.

13. Repeat the same with remaining batter.

14. Ghee goes well with this Fruits and Spicy Rava Rotti.

Note : 

Use of curd instead of milk is optional. Rotti turns soft and nice. Adding little jaggery is optional.
Allowing the batter to rest, turns rotti soft and yummy. Use of milk or curd is optional. You can use normal water instead of boiled milk. Milk adds to the taste and aroma.
Time  : 30 to 40 Minutes.
Serves : 3 to 4 .

Wheat -Rava Cake

Here comes Christmas and the celebration starts. We do enjoy wishing people, having a piece of cake , cookies etc etc etc.
Even facebook pages are loaded with varieties of cakes. i too thought of preparing a healthy cake using wheat flour and rava/semolina. It has turned as perfect cake and let us enjoy together having a yummy and healthy cake and say Merry Christmas and happy new year 2018 to All.

Here we go :
I have used Ashirvad wheat flour and medium size rava, cooking oil and little bit of ghee, sugar, cinnamon. Added little dates also.
No egg in this Wheat -Rava Cake.

Things Needed :

Wheat flour : 1 1/2 Cup
Medium size Rava : 1/2 Cup
Sugar : 3/4 Cup
Cooking Oil : 1/2 Cup
Curd : 1/2 Cup
Milk : 1/4 Cup
Cinnamon stick : 1/4 inch
Sal : A pinch
Baking Powder : 1 Teaspoon
Baking Soda : 1/4 Teaspoon

Method :

1. Sieve wheat flour and rava, baking powder,salt and baking soda altogether.


2. Put sugar in mixi jar and powder it. Add oil and curd and churn it nicely till it turns smooth paste.

3. Add milk and, cinnamon stick and grind it for 2 to 3 minutes.

4. Now shift the ground mixture to a big bowl and mix the flour mixture slowly. Add little milk if the dough turns very hard.
5.Let it mix well. No lump should be remained.
6. Apply ghee on the baking tray and sprinkle little wheat flour on it. Spread it well.
7. Pour the ready mixture to a tray and tap the tray to spread the dough evenly.


8. Bake it with 180 degree celcius for 35 to 40 minutes. (Oven baked). Remove it from oven and let it be there on the top for for 5 minutes. ( After baking just leave it there).
9. Insert a knife edge to make sure the cake is done. (It does not stick to the edge of the knife).

10. Cut it once it is cooled. Enjoy with a cup of coffee/tea or whenever you want it.


Note :

You can use thin variety of rava. (optional). Use of butter /ghee instead of oil is optional. Use of rose essence instead of cinnamon is optional. You can also prepare this cake in pressure cooker. Remove the gasket from the lid. Do not use weight. Place a plate or bowl inside the pressure cooker and place the cake dough container on the top. Close the lid and bake for 35 to 40 minutes. If the cake turns hard pour some milk and mix it well. (It should be bit thicker than idli dough). I have used mixi jar to churn the ingredients. Use of egg beater, cake mixer is optional.
Time : 40 Minutes. 
20 Small pieces can be done.

Quick Kodubale

Happy Deepavali to All. Festival of lights ..spreading the light to each and every one..Stay blessed.
Deepavali is fun to enjoy with full of hearts. Lighting Jyothis to chase away the darkness, bringing happiness by distributing sweets and namkeens (salted snacks) is a good thought indeed. Lets have one more spicy snack which is very famous in India and other countries of the world. That is Kodubale. Kodubale means a bangle shaped spicy snack.

It can be prepared using different ingredients. I too have prepared some different varieties of kodubales.
Let us see the recipe of Quick Kodubale. Kodubale, one of the yummy dish which goes well with a cup of coffee, as a side dish like papad, or when you are watching movie or any t.v. serial. 
I have used rice flour, chenna flour, chiroti rava, chilly powder, little jeera, oma (ajwan), salt and butter.
No maida/all purpose flour in this Kodubale recipe. You can also prepare lovely nippattu with same dough.

Things Needed :

Fine Rice flour : 2 Cups
Roasted Chenna / Pottu kadale/Huri kadale : 1/4 Cup
Chiroti Rava /Thin variety of semolina : 1 Tablespoon
Butter :  1 1/2 Tablespoons
Chilly Powder : 2 Teaspoons
Ajwan/ Oma /Carom seeds : 1/2 Teaspoon
Salt : As required :
Jeera /Cumin Seeds : 1 Teaspoon
Ingh/Asfoetida : A little 
Cooking Oil : 2 Cups or little less

Method :

1. Take a big bowl and add rice flour, rava/thin semolina, salt, butter, jeera, Carom seeds, Ingh and chilly powder.

2. Powder Roasted Chenna and add it with other ingredients. Mix all the ingredients well.

3. Add required water slowly and prepare dough. Kneed the dough well.
4. Divide the dough into small portion.

5. Take a small portion of the dough and then with your palm make a rope shape.
6. Join two ends and make circle. Arrange these done kodubales in a tray or plate.
7. Keep a frying pan on the fire and heat. Slowly drop in the done kodublales. 
8. Fry them on low and medium flame till they turn golden brown. 

9. Fry them on both sides and remove it from the oil. Put it on a kitchen tissue.

10. Repeat the same with remaining dough and prepare kodubales.
11. Store them in a airtight bottle /box once it is cooled.
12. Serve with cup of coffee/tea/Fresh juice.

Note :

Do not add more butter. It will turn very soft and get powdered while frying. You can also add sesame seeds instead of carom seeds. Use of more chilly is optional. Use of any cooking oil is optional. Do not make the dough very soft. It absorbs more oil if the dough turn very soft. Add little more rice flour and kneed the dough well before preparing. 
Time 30 Minutes
Serves : 25 to 30 Kodubales. (According to size and shape.

Banana -Wheat-Rava Sweet Poori

Banana-Wheat-Rava Sweet Poori is good to have for breakfast/snack and loved by sweet lovers. It is done with banana, wheat flour, chiroti rava (thin variety of rava), and little jaggery.

 It is similar to Our Mangalore Buns but used wheat and rava and jagery instead of sugar. No need to add any cooking soda or baking powder and no need to allow the dough to rest for many hours.
Now it is Navarathri and many people will Arrange dolls according to their tradition and culture. Keeping dolls during Navarathri is one of the beautiful and excellent custom it keeps you busy and active. The creativity in arranging dolls is really wonderful activity and it helps to younger generation to know about our culture and moral. People come to visit and see dolls and you can serve these sweet pooris to them.

Banana Wheat- Rava Sweet Pooi is good for breakfast/snack/kids snack box and even for travelling. 

Lets see the recipe Now:
 

Things Needed :

Wheat flour : 2 Cups
Chiroti Rava : 2 Tablespoons.
Ripe Banana : 1 Ripe
Curd /Milk : 1/4 Cup
Ghee : 1 Tablespoon
Jaggery : 2 Tablespoon
Salt : A little
Oil : 1 Cup or little more


Method :

1.Peel off the banana skin and put banana fruit in a big bowl. Add a tablespoon of curd/milk and jaggery.
2. Add salt to it and mix it well. Smash banana nicely and let jaggery mix with banana. ( Powder jaggery before adding).

3. Add wheat flour, chiroti rava and ghee. Mix all the ingredients nicely and prepare Poori dough.


4. Add little more wheat flour if the dough turn sticky. Kneed the dough well.


5. Divide the dough into small portions and turn them as small ball shape.
6. Just apply little oil on each small portion and roll them as small poori shape. (Round Shape).

7. Keep a pan on the fire and add oil. Let it get heated.


8. Fry pooris on hot oil. Fry till they turn slightly golden brown. Fry on both sides.


9. Remove it from hot oil and put them on a kitchen tissue. Banana - Wheat -Rava Sweet Pooris are ready to serve.

10. Serve with coconut chutney or choice of your curry.


Note: 

Add wheat flour if the dough gets sticky or watery. Do not use any water. I have used boiled and cooled milk. Adding milk to prepare the dough is optional. Add milk little by little so that you can prepare thick dough very easily. Adding jaggery more /less is optional. Powdering jaggery before adding helps jaggery to mix with curd easily. Adding curd helps the dough to be soft. Adding ghee helps the poori to be crispy.
Time : 20 Minutes.
Serves : 25 to 30 Pooris can be prepared . (According to size).
