Quick Paneer Bites

Paneer is a milk solid and is filled with proteins. I have prepared quick bites using Nandini
Paneer. It is an easy, quick, simple and healthy bite.


I have used Nandini Paneer, chilly powder, jeera powder, garam masala and chat masala. Added a teaspoon of curd and mixed the spices and rolled the paneer pieces in spice mixture. Left that for rest for 10 minutes.

Let us see some benefits of eating Panner in our diet.

Cottage cheese /Paneer is rich in protein. It helps to strengthen our bones and teeth. It is good for improving our digestion. It also maintains the blood sugar levels in our body. It is a rich source of proteins, magnesium and folate.
Let us see the recipe Now :

Ingredients :

Paneer : 250 Gr.
Curd /Yogurt : 1 Tablespoon
Chilly Powder : 1/2 Tsp
Pepper : Crushed : 2 to 3 pods
Garam Masala powder : 1/4 Tsp
Jeera /Cumin Seeds : 1/2 Tsp
Chat Masala powder : 1/4 Tsp
Salt : As required
Cooking Oil : 2 Tbs

Method :

1. Cut Paneer into desired shape and size.


2. Take a big bowl and Put curd, salt, garam masala, chilly powder, Crushed pepper and jeera.
3. Mix all the ingredients nicely and add paneer. Slowly stir and leave it for 5 to 10 minutes.


4. Keep a pan on the fire and heat. Add a teaspoon of oil and place paneer one by on hot tava.
5. Sprinkle some oil on top and by the sides. Cook on both sides on medium flame.


6. Shift it to a serving dish and sprinkle some chat masala on top and serve.

Note :

You can add more spices of your choice. I do prepare dishes with mild spices. You should cook on both sides till golden brown. Cook on medium flame. Cooking the whole process on low flame will turn Paneer hard. Adding more oil is optional.
Time 20 Minutes. : All together.
Serves : 2 to 3.

Paneer Parata.

Paneer Parata is prepared using home made paneer and wheat flour.


Some time the milk gets spoil and curdles once it is heated. We feel sad because of it. When this happens I try and prepare paneer out of that split milk. (Immediately). The paneer is used in cooking later.
How to prepare Panner @ Home ?
Boil Milk, put some lemon extract/vinegar to the hot milk . It starts to curdle. Leave it for cooling. Take a clean towel. Drain the water through the towel. Let the thick milk content stay in towel. Squeeze out the remaining water. Place a heavy bottomed pan on the towel which has milk content. So the whole water goes off. Take the paneer content and kneed it well. Paneer is ready to use.
Paneer/Indian cottage cheese has become very popular than before and all age group love to have paneer in their dishes.

Paneer/Cottage cheese has a good source of calcium and it helps in maintaining strong teeth. Paneer contains Vitamin D so it helps to preserve the teeth to be in good conditions. Paneer is rich source of calcium and good for women, elderly and children who suffer from malnutrition. Paneer is a rich source of protein, and vitamins which are necessary for proper bone health. Vitamin B complex in Paneer is good for women, men and children. Paneer helps to absorb and distribute calcium in our body and it helps and guard against diseases. Paneer is good for gaining weight since it has good amount of proteins, fats, calcium, vitamins and minerals. Eating Paneer is good for enhancing blood formation and strengthen the liver.  
Lets see the recipe Now :

Things Needed :

Paneer : 1 small bowl. (1/2 liter milk)
Wheat flour : 2 Cups
Jeera /Cumin Powder : 1/2 Teaspoon
Garam Masala : 1/2 Teaspoon
Chilly Powder : 1/2 Teaspoon  
Dry Ginger Powder : 1 Teaspoon
Coriander leaves : 1 Handful
Oil : 4 to 5 Tablespoons
Ghee : 1 Tablespoon

Method :

1. Put wheat flour, paneer, garam masala, chilly powder, jeera powder and a little turmeric powder in a bog bowl.
2. Wash and add cut coriander leaves. Add 2 tablespoons of oil and a tablespoon of ghee.

3. Add a teaspoon of dry ginger powder and add warm water. Mix it well and prepare chapati dough.

4. Divide the dough into small size balls.

5. Keep 1 cup of dry wheat flour in a small bowl.
6. Dip a small size of parata dough and roll as chapati.

7. Keep a pan on the fire and heat. Put rolled paneer parata. Sprinkle oil on the top and cook for a minute.
8. Turn the other side and sprinkle little (1/2 teaspoon) oil around the parata on outer surface.
9. Cook on both sides and remove from the pan.

10. Repeat the same and prepare the remaining paratas.

11. Serve paneer paratas with curd and the side dish of your choice.
12. We had " Paneer Parats with a cup of curd/yogurt and mango tokku. (Chutney)

Note :

You can use more oil while preparing the dough. (Optional). Adding green chilly to the dough is optional. Adding grated onions to the dough is optional. I did not add. Adding any spice is optional.
Example : Pav bhaji masala, chat masala, channa masala etc. Adding normal water to prepare parata dough is optional. Warm water helps the dough turns parata soft and nice.  Use of any brand paneer is optional. (Nandini, Amul) .
Time : 30 Minutes.
Serves : 2 to 3 .(6 to 8 Paratas can be done, according to size ).

Kadaayi Paneer My style

Kadaayi Paneer is one of the famous yummy dish which most of the people love to have it with rotis, chapatis or any type of bread (Naan).

I wanted to prepare this Kadaayi Paneer since long back. One of the friend in Face book, Roopa Satish requested me to prepare this long back. My sons like Paneer and I am not a big fan of Paneer. Once in a while it is ok to have, though it is one of the milk content. I am fond and big fan of milk and ghee.
Let us see some benefits of having " Paneer" in our diet.
Paneer is made from milk and it has good source of proteins. Paneer is very popular in India. Paneer is known as cottage cheese, Paneer takes longer time to digest so it keeps the hunger away. Paneer is loaded with calories and it is very good for hard working people. Paneer contain calcium and good for healthy bones and teeth. It also help in improving the metabolism of our body. Paneer is one of the nutritious food for vegetarians.
Kadaayi means a pot, which is used for cooking. I have used 200 grams of Nandini Paneer, which is one of the reliable good suppliers for milk and milk product here in Karnataka.
I have used tomatoes, fresh roasted spices, cashews and fresh milk cream here.
NO ONIONS OR NO GARLIC IS USED IN THIS ' KADAI PANEER' .

Lets see the recipe :

Things Needed :

To Cook:
Paneer : 200 grams (Nandini)
Capsicum : 1

To Grind 
Tomatoes : 2 (Medium size)
Ginger : half inch
Cashew Nuts : 1 Tablespoons
Tamarind : A small marble size
Dry roasted spices

To Dry roast 
Coriander seeds : 2 Tablespoons.
Jeera: 1/2 Teaspoons
Pepper Pods : 3 to 4
Red chilly : 3 to 4

To Season 
Oil : 1 Tablespoon
Jeera : 1/2 Teaspoon

 To Add :
Ground spice paste
Garam Masala powder : 1/2 Teaspoon
Turmeric Powder : A pinch
Kasoori Methi ( Raw Methi powder ) : 1 Tablespoon
Fresh Cream : 2 Tablespoons
Coriander Leaves : 2 Tablespoons


Method : 

1. Cut paneer into small pieces.

2. Wash and boil tomatoes for 2 minutes. Remove the outer skin and cut into small. Keep it aside.
3. Wash and cut capsicum (remove the seeds and bulb) and cut into small pieces. Soak Paneer pieces in Hot water. 

4. Keep a pan and dry roast coriander seeds, jeera, pepper and red chilly. ( I used byadagi chilly).

5. Grind it with tomato pieces, cashews, ginger, tamarind and roasted spice mixture.


6. Keep a little pan and heat. Add a tablespoon of oil and jeera. Let jeera turn slightly brown.
8. Add cut capsicum and fry nicely till it turns soft. Put off the fire.

9. Keep little bigger pan on the fire and put ground spice, cashew mixture. Add salt and garam masala powder . Mix all the ingredients nicely. Add a pinch of turmeric powder. Let it boil for 2 minutes. Add water if required.


10. Add Paneer pieces (only the paneer pieces) and mix it nicely. Let it boil for 3 to 4 minutes.


11.Add Kasoori Methi and mix it. Add fried capsicum and mix it well. Let it boil for a minute.


12. Kadaai Paneer is ready to serve. Shift the ready Kadaai Paneer to a serving dish.

13. Add cut coriander leaves and fresh cream on the top and serve.

14. Serve with your choice of Roti/poori/naan/chapati ...

Note :

Frying paneer pieces in oil is optional. (Not that healthy).
Put the fried Paneer in Hot water so that paneer pieces will be soft and yummy.
Adding more spice like chat masala or any other spices is optional. Adding butter/fresh cream according to your wish. (More calories :) ). Use of fresh roasted spice adds to the taste. You can also use coriander powder and jeera powder instead of roasting the spice. Use of any brand " Paneer " is optional.
Time : 20 to 25 Minutes
Serves : 4 to 5

PANEER- TOMATO CURRY

Paneer - Tomato Curry is easy to prepare in very little time. It is one of the easy dish and goes well with almost all type of rotis. This curry is not spicy and every one loves to have paneer in their diet now a days. Paneer is filled calcium since it is made of milk. Just give a try and let me know how did it turn?
I have used Nandini Paneer , tomatoes, almonds, garam masala and  coriander leaves.
Cottage cheese is known as Paneer and it contains rich source of calcium and Protein. Using Paneer we can prepare lots of dishes , like Paneer Tikka, Parotha, Pakoda. Chapati Paneer Roll and many more. Kids love to have Paneer in their diet. Here is a Paneer Curry simple recipe and this curry is prepared with out using onions or garlic and all age group will definitely like it. Paneer is made with milk.  Paneer - Tomato curry is an easy dish as I said it does not take much time. Give a try and I am sure you will love it.

Things Needed:

Paneer: 2oo Grams.
Tomatoes: 2 to 3
Coriander leaves: 1 Table spoon
Garam Masala : 1/2 Tea spoon
Green chilly: 1
Ginger: 1/2 Tea spoon (grated)
Almonds: 5 to 6
Grated fresh coconut: 1 table spoon
Salt : to taste
Jeera: !/2 Tea spoon
Oil: 1 Table spoon

Method:

1.Thaw the frozen Paneer and cut them in to small pieces.( According to your wish). Put them in hot water till you use.

2. Wash and grind  Tomatoes (raw) , green chilly, grated fresh coconut, Almonds (with skin),grated ginger  and 1/2 tea spoon of garam Masala and keep it aside.
3. Now keep a pan on the fire. Heat and put 1 teaspoon of oil and fry Paneer cuts (cubes) till little brown and remove them.
4. Now put one more spoon of oil to the pan and put jeera and fry for 10 seconds.
5. Add ground tomato mixture. Fry till the raw smell goes off.
6.  Add fried paneer to it. Mix it nicely. Add required water. Let it cook for 2 to 3 minutes.
7.  Add turmeric powder a pinch and salt to it.. Mix it nicely and cook for a minute

8. Shift it to a serving dish and add coriander leaves. Add a teaspoon of butter or cream on the top.
    ( Top layer on the milk).
9. Serve with the main dish you have prepared.
Note:
Soaking paneer in hot water helps the paneer to be soft. Frying paneer turns it chew. So do not fry much. Use of onions and garlic is optional. Use of more/less spice is optional. Adding milk cream on the top adds to the taste. ( Use home prepared cream. Just collect the cream once you boil milk and put it in freezer and use it within a week). Use of any brand garam masala is optional. Use very little of it.
Serves 2 to 3
Time : 15 Minutes.
