Moong Dal Chakkuli

Chakkuli , Chakli, Muruku...name it, you crave for it. You all know Chakkuli can be prepared in so many types, using different ingredients. Rice flour, Rava, Maida, Wheat the list goes on. We can use Urid, Channa or Moong dal. We can prepare Peas chakkuli also. Anyways its done according to the taste bud, or give a try what ever it is, munching chakkuli and watching a movie or reading a book takes us to our own world. Hmmmmmmmm.


Here I have prepared Chakkuli using Moong dal, Rice flour and some spices like jeera, red chilly powder and little ingh. (Asafoetida). I prepared  this chakkuli, when I called some of my relatives to our home for lunch. This was the munch served with coffee  and tea. It goes so well with Coffee, Tea and Fruit juice. We can put these chakkulis to kids lunch box to munch after food or during break time. Good for Kitty Parties, kids parties and any parties of course.


This is the simple recipe and we can prepare this any time if we have moong dal and rice flour. I am sure you all will love to have this  crispy, crunchy Moong dal Chakkuli.

Things Needed :

Moong Dal : 1 Cup.
Rice flour : 3 1/2 to 4 Cups
Salt : to taste
Sesame Seeds : 2 Table Spoons
Red chilly Powder : 1 Tea spoon
Butter : 2 Table spoons
Oil : 2 Cups
Chakli Mould

Method :

1. Wash and cook Moong dal in a pressure cooker with required water.( 3/4 cup of water will do ).
2. Leave it for cooling.




3. Take a big bowl. Add salt, sesame seeds, chilly powder, rice flour (use fine rice flour) and butter. Mix all the ingredients nicely.
4. Now add cooked dal and mix all the ingredients nicely and prepare thick dough. ( Use extra water from cooked moong dal if required)
5.Wash and clean the chakli mould ready.
6. Keep oil on the fire and heat.
7. Divide the chakli dough into small portion and fill the small portion in chakli mould.


8. Press chakli mould and prepare chakli, arrange them on the plate.




9. Fry these chakli on medium and high flame ( balance in between) on both sides till they are change their colour.


10.Remove from the pan and put it on kitchen tissue. It helps to absorb extra oil . Repeat the same with remaining dough.






Note :

Cook moongdal nicely and kneed the dough well. Let it be not too soft or hard. ( You should be able to press from the mould).
you can use more chilly powder if you want the chakli to be spicy. You can also use jeera instead of Sesame Seeds. Better to use any one of them.. Do not use more butter. The chakli turns too soft and it may absorb more oil.
Time : 40 minitues.
25 to 30 Chakkulis can be prepared.

Rava Chakkuli

Rava Chakkuli or Chakli is a deep fried crispy snack and we can munch them any time of the day. Chaklis are made in different ways and using  differebt ingredients, like rice-urid, maida (all purpose flour), channa or besan flour, wheat flour and rava. These chakkuli is good to eat while having your coffee or tea. Any age group will fall love with Chakkuli. It will be crispy, tasty and you can not stop eating them once you start eating. This slogan goes very well with Chakkuli too.

Home Made Chakkulis are always safe. You know that what kind of oil is used and how good they are for eating. I am sure everyone will agree with my words. So time to know the recipe now. It is very easy to prepare. I have used Medium size Rava (Semolina) instead of thin (chiroti rava). I just wanted to try , thats it. It comes out super.

Here is a recipe of Rava-Rice Chakkuli. ...as I said before, you all love this I am sure.

Things Needed : 

Rava : Semolina :  1 Cup ( Upma Rava : Medium sized)
Rice flour : 2 Cups (Fine powder)
Salt : To taste
Water : 2 Cups
Chilly Powder : 1/2 Tea spoon
Sesame Seeds : 2 Table spoons
Oil : 2 Cups  (To fry).
Bitter : 1 Table spoon full

Method :



1. Keep a pan on the fire . Put water. Add salt. When it starts to boil add rava and mix it well. Let it dissolve and thicken.


 2. Now put off the fire and remove the pan from the fire.

 3. Add rice powder, sesame seeds and mix it well with rava. If needed add water and prepare the dough. It should not be too thick or too loose. Kneed the dough well.





4. Now keep a pan on the fire and put oil and heat.
5. Prepare chakkuli using chakkuli mould and fry those chakkuli in the hot   oil. Let the oil be on medium flame.






7. You can also prepare kodubale (another snack item) using the same dough.

Note :

The consistency should be correct to prepare crispy chakkulis. Do not add water if not necessary. Add them little by little while kneeding the dough. Add little more chilly powder and ingh if preparing Kodubali. It taste better. Fry kodubale on low flame to make them crispy. Better use it within a week.

Time : 40 minutes.
25 to 30 Chakkulis can be prepared.

Butter Chakkuli (Benne Muruku) & Kodubale

Benne Muruku is one variety of Chakkuli, crispy fried snack, which is very very soft and crisp and it melts in the mouth with yemmy taste. Benne means butter and the crunchy chakkuli is so soft and crispy.

Chakkuli can be made using different flours. Chakkuli is most famous crispy and tasty snack at any time of the day. Benne Muruku is nothing a Crispy Chakkuli prepared with Maida and Rice flour. Muruku is also known as chakkuli in Kannada, chakri in Gujarati, chakali in Marathi, murukulu in Telugu, muruku in Tamil.

Chakkuli or Muruku is one of the traditional treat for festivals like Diwali and Krishna Janmashtami. Now a days we get Chakkuli all over India. Chakkuli is one of the famous dish of South India. Traditionally Chakkuli is prepared with urid dal and rice flour.

Here is a recipe of Benne Muruku (Butter Chakkuli). Chakkuli here is prepared with rice flour, Maida and salt, Til seeds and oil. These chakkulis are easy to prepare. We get this Benne Muruku in Bakery acondiment stores and super markets. Home Made Benne Muruk is tastier and safe. It is a fried Item, you can have them any time of the day. You will enjoy eating chakkuli with a cup of Tea or Coffee.

Things Needed :

Maida (Plain flour) : 2 Cups
Rice Flour : 2 Cups
Chilly Powder : 1 Tea spoon
Sesame Seeds : 2 Table spoons
Salt : To taste
Butter : 1 Table spoon
Oil : To Fry (2 to 3 cups)
Chakkuli Mould to prepare chakkuli


Method :

1.Dry cook  Maida and Rice flour for 8 to 10 minutes. (Do not add water , Dry cook  in pressure cooker using weight).
2. Let the flour cool.


3. Now powder the flours  nicely using your fingers. Put it in a big bowl.

4. Add salt, sesame seeds, butter and chilly powder to the flours.


5. Mix it nicely and add water little by little and prepare dough.


6. Wash chakkuli mould and clean with dry cloth.

7. Divide the dough into small portions and put one portion into the mould.


8. Press the mould and prepare chakkuli on a tray or a wet towel.

9. Keep oil on the fire and heat. When the oil becomes hot fry chakkulis.
10. At time you can prepare 4 to 5 chakkulis. Prepare chakkuli on medium heat.






11. Fry on both sides till they turn slightly brown and remove from the oil and put them on the kitchen Tissue.



12. Prepare chakkuli with the remaining dough.

13. Now the chakkulis are ready to serve.
14. Serve with Cup of Hot Coffee or Tea.

15. You can also prepare Kodubale with the same Chakkuli Dough






You can also prepare chakkuli this way. Fill the chakkuli mould and straight leave the dough to the hot oil. giving a shape then and there while pressing the mould.

Note:

You can use dalda or hot oil instead of butter. Remember dalda is not a good option to choose. If you add more butter the chakkuli may dissolve in oil since they turn very soft. Use exactly one table spoon butter Or it may take more oil while frying and will not taste good. You can also add roasted powdered Urid dal. I have not added. Fry chakkuli on medium flame and be careful while you turn them or remove them from oil. You can also use jeera instead of sesame seeds. Using any one of them is advisable. Be aware the chakkuli sold outside may contain dalda or left over oil.
Guide  cook dry maida and rice flour before using it. 
Keep Maida and rice flour in different bowls while cooking. Do not add water while cooking. Put a glass of water to pressure cooker and keep an empty bowl up side down. Then place these flour bowls and cover with a plate. So that water does not enter the flour bowl. Close the  pressure cooker with its lid and put whistle and let it cook for 8 to 10 minutes. Allow it to cool and remove the flour and powder them nicely ( with out using water).  Use it when it is the flour is cool. You can also cook these flours in Idly cooker. 

Time : 40 Minutes (Including steaming the flours).
25 to 30 chakkulis can be prepared (according to the size of the chakkuli).

Chakkuli

Chakkuli or muruku, is a savory fried item and you can munch this any time of the day. Chakkulis are prepared in many ways. Here is a Crispy Chakkuli which you can prepare using, Rice flour and roasted channa. (Hurikadale or Pottu kadaleaaaa). Chakkuli is all time favorite for all group. Hurikadale is also known as putana, pottu kadale or pappulu.
Ingredients:
Rice flour: 4 Cups.
Hurikadale : 1 Cup
Butter : 1 Table spoon
Chilly Powder : 1/2 Tea spoon
Salt : to taste
Water : Required
Jeera or Sessame seeds : 1 Table spoon
Oil : To fry : 2 to 3 Cups
Method : 
1. Keep a pan on the fire and heat. Dry roast rice flour for 3 to 4 minutes and remove from the pan and leave it for cooling.
2. Powder Hurikadale (roasted chenna) in a dry grinder and keep it aside.
3. Take a big bowl and put the cooled rice flour, ground roasted chenna powder, salt, butter, sesame seeds chilly powder and mix it well.
4. Now add water little by little to the flour mixture and prepare thick dough. ( Pooris consistency ).
5. Divide the dough into small balls and insert the ball to chakkuli mould and press the chukkli mould and prepare chakkuli on a plate .
6. Keep a frying pan on the fire and heat. When the oil heats put prepared chakkuli one by one in the hot oil and fry them on medium heat.
7. Let the chakkuli fry on both sides and remove from the frying pan. Put it on the kitchen towel (tissue) so that the tissure obserbs extra oil from the dhakkuli.
8. Repeat the same with the remaining dough.
Serve chakkulis with hot coffee or tea or with any cool drinks and enjoy.
Note: The Rice flour should be fresh and nicely ground. Dry grind hurikadale (roasted chenna) into nice powder. Use a tablespoon full of butter. Cooking oil can be heated and used instead of butter. Remember the butter taste better and oil.
Must be carefull while frying chakkulis. Or it turns black. Some time it spurts out because of sesame seeds and it might cause burnt.
Time : 45 minutes to 1 hour.
25 to 30 chakkulis can be prepared.

Chakkuli( Urd Muruku)

Chakkuli or Chakli is a fried snack prepared using rice flour as a main ingredient.
We in Karntaka/India call as Chakkuli in Kannada langurage. In TamilNadu it is called as Muruku. Chakli in Hindi and what ever we call this fried snack is liked by most of the fried lovers.


Chakkuli can be eaten at tea time, or as starter during the dinner or anytime of the day you can have chakkuli. Even you can pack some chakkuli for kids lunch box.
We can prepare chakkuli in many ways. I have done chakkuli with boiled urd dal and rice powder. Preparing this chakkuli is very easy.
Things Needed:
Urd Dal: 1 Cup
Rice powder: 4 cups
Butter: 2 Table spoons
Salt: to taste
Chilly Powder: 1 Tea spoon
Sesame Seeds: 1 Table spoon
Oil: 2 to 3 cups
Chakkuli Mould.

Method:
1. Roast urd dal and boil with 1 cup of water in the pressure cooker for 8 to 10 minutes. Leave it for cooling.
2. Keep a pan on the fire and heat. Now roast rice powder for 10 to 20 seconds will do. (Let the rice powder be warm). Leave it for cooling.
3. Take big bowl. Put cooled Urd dal. Remove the excess water and keep it aside, and smash in the hand nicely.
4. Add rice powder to the Urd dal mixture. Add salt, sesame seeds, chilly powder and 2 tablespoons of butter.
5. Mix it nicely. Use extra water drained water if only required and prepare chakkuli dough (It can be poori dough consistency)..
6. Now fill the chakkuli mould with chakkuli dough and close it. Roll chakkuli on the plate.
7. Keep a deep pan on the fire and heat. Add oil to the pan. Put chakkuli in the oil and fry them till crispy and take it out from the oil.



8. Repeat the same with the rest of the dough. Crispy Chakkuli is ready to serve.
9. Put them in a airtight bottle and close it when the fried chakkuli is cooled down.
Note: You can directly cook the urd dal with out roasting. Roasting dal will add aroma to the chakkuli. You can also add more chilly powder if you wish. You can also add jeera along with sesame seeds. Do not allow the prepared dough to be dry. You can cover the dough with wet kerchief or small towel. Do not refrigerate the dough. It may take more oil.
