Mangalooru Buns.

Mangalooru Buns are very famous dish from Mangalore /Udupi.
 They are  prepared by using ripe banana, sugar and Maida (All purpose flour). Its one of the favourite munching food of Dakshnia Kannada people. All age group love this Buns and you can have them at any time of the day.
You can have these buns with chutney or vegetable saagu. 

Ingredients :
Maida or white flour : 2 cup
Sugar :1/4 Cup
Curd : 1 Table spoon
Cooking Soda : 1/4 Tea spoon.
Salt : little
Banana : 1 ( Medium size)
Ghee : 1 table spoon
Oil : to fry ( 1 cup )

Method :
1. Mix sugar, salt and curd nicely. Add Maida, ghee and and mix it well. Slightly softer than chapati dough.
2. Kneed well all together. ( Poory consistency ). Do not add any water. while mixing the dough.
3. Keep this poori dough for 4 to 5 hours. If you are planning to prepare for breakfast you should prepared the dough at previous night.
4.Add baking soda to the dough and kneed it well again. Roll them as small porri and keep it aside.
Let the poori be bit small and thicker than the poori.
4. Now keep a pan on the fire and put oil . Heat the oil.
5. Fry the rolled pooris one by one on medium flame.
6. Serve them with coconut chutney or vegetable saagu.

Note : You should prepare the dough at least 4 hours before you prepare the buns. You can also use cooking soda just before frying the buns. Mix it with the dough and kneed well.  This way you can avoid the buns to absorb more oil.
Fry them in medium flame.  You can reduce the sugar quantity if you don't like the sweetness. If the dough is little liquid you can add more flour to make it thick. 
Serves : 3 to 4
Time : 15 minutes +  Resting the dough for 4 hours.
