Carrot Uttappa

Uttappa is a puffed dosa with some vegetables or onion pieces. Here I have tried with carrots and the batter used here is idli batter. Idli batter has semolina instead of rice. I have steamed medium sized rava, cooled it and added to fermented urid batter. After preparing idli, the remained batter is used for preparing Carrot Uttappa.


Idli batter is slightly different from dosa batter. Idli batter has more urid dal and the  the rice used will be rava consistency.
Carrot Uttappa is good for breakfast, or in the evening or for dinner. Carrots are full of fiber and rich in vitamins and minerals.

Ingredients :

Idli Batter : 1 Bowl
Carrot : 1
Chilly Powder : 1/2 Tsp
Ginger : 1/2 Tsp
Salt : A little


Method : 

1. Wash and grate carrot, remove the outer layer of ginger and grate it.
2. Mix carrot and ginger gratings, salt and chilly powder nicely and keep it aside.
2. Keep a pan on the fire and heat. Clean it with a clean kitchen tissue.
3. Add very little oil and put a ladle of batter on the hot pan.

4. Add some grating mix and put a tsp of oil on top.


5. Cover and cook on medium or low flame.


6. Turn the other side and cook for a minute.

7. Take out the Carrot Uttappa from the pan and serve with your choice of side dish.


8. Prepare the same with remaining Uttappa.

Use of oil is optional. Adding coriander and curry leaves is optional. I did not have the coriander leaves so could not add it. Better use less spice for good health.  No onion or garlic is added because it might cause acidity. I am not in favour of onions and we do not use much onions.
Time : 30 Minutes.
Serves : 3 to 4 .

Awalakki Uppugari (Dhideer Poha)

Awalakki means Poha or Awal or Beaten Rice.

Awalakki is used for preparing many dishes like payasam, awalakki chitranna , awalakki uppittu or Awalakki puliyogre and Awalakki Mosaranna. Awalakki Unde, payasa are some sweet dishes which we normally prepare. Awalakki is fried and used in mixture which is very tasty munching item. Here I have tried Awalakki Uppugari which has sweet and salty taste and goes very well as break-fast or as evening snack. And when ever you feel like munching something you can prepare this Awalakki Uppugari and have them and njoy. Its also stomach filling and easy to prepare.

Things Needed

Thin Awalakki ( Poha thin sized ) : 2 Cups
Fresh coconut : 1/2 Cup
Green chilly : 1
Sugar : 2 Tea spoons
Oil : 1 Table spoon
Mustard seeds : 1/2 Tea spoon
Urd dal : 1/2 Tea spoon
Curry leaves : 5 to 6
Salt : required
Method :
1. Wash curry leaves and green chilly and cut it into small pieces. Grate coconut and keep it aside.
2. Take a big bowl and put Awalakki, coconut, sugar and salt.
3. Keep a pan on the fire. Heat and put oil. Put mustard seeds, urd dal and green chilly to the oil. Let the mustard spurt.
4. Add curry leaves and put this mixuture to the Awalakki bowl and mix it nicely.
5. Serve this Awalakki immediately or it turns very soft.


Note :
You can also add cut onions to the mixture. Cut onions into small pieces and add it at the end and mix it again before serving.  Instead of green chilly you can add red chilly. Add red chilly while adding mustard seeds.  You can also add rasam powder to the mixture to get different taste.

Cucumber - Sweet Idlies....

Cucumber or Southe kai  sweet idlies are tasty and healthy food and can have them for break fast or as evening snack. It is easy to prepare and any age group people can have this idlies.
Things Needed : 
Cucumber : 2 to 3 . (Medium size ).
Raw Rice : 2 cups.
Coconut : 1/2 cup.
Jaggery : 1/2 cup.
Salt : a pinch.
Water : Required.
Ghee : 1 Table spoon 
Method : Wash and soak raw rice ( dosa rice) for 2 hours. . Grate fresh coconut and cucumber and keep it aside.  Grind soaked rice with   fresh coconut and little water like rava consistency and add jagary to it . Remove from the jar . Add salt  and grated cucumber and mix it nicely. 
Now apply ghee to idli plates and keep it ready . Put a spoon ful of the dough on the idlli plates keep it in the pressure cooker or idly cooker and cook for 8 to 10 minutes.  Sweet cucumber idlies are ready to serve. Serve with ghee on the top.
Note : Adding coconut will help the idly to be soft and it gives a nice aroma too. Can add cardamom to the dough.  Do not grind rice till paste. Can use rava ( samolina ,medium size rava) instead of rice. Roast rava and then add it to the ground mixture and prepare idlies.
Serves : 4 to 5.
