Easy Jolada Rotti/ Jowar Roti

Jola/Millet/Jowar/Sorghum Rotis are very famous these day. These Jowar rotis are soft, healthy and gluten free. I have tried to do Jowar rotti in this way and it is an easy method to prepare.


It is very important to use fresh jowar flour to get good rotis. 

Let us see some benefits of using Millet in our diet.

Jola / Jowar is one of the millet family grain and millets are good for health. They help to balance the sugar level and blood pressure level. They are gluten free. They have very little carbs in them.
It has no cholesterol in it. It is fiber rice grain. Good for diabetic patients.
Previously I have posted a method of making jolada rotti . That is you boil water and then add millet flour, stir till they turn one ball. Kneed the done dough and use it for making Millet rotti. You can try that method if the flour is kept for some time and then using it.

Here is a simple method and easily you can prepare Jolada Rotti.

Ingredients :

Jola/Jowar/Sorghum :  2 Cups
Hot boiling water : 1 Cup
Salt : A little
Ghee (Optional)
Method :
1.Take a big bowl and add Millet/Jola /Sorghum flour and add 1 cup of hot boiling water.


2. Just leave it for 2 minutes. Mix all the flour nicely. Add normal water and prepare dough.
3. Prepare dough and kneed it well. Divide the dough in small portions.


4. Keep a cup of dry flour in a bowl.
5. Take a small portion of the dough and kneed it well in your hand.
6. Dip the dough in dry flour and roll it like chapati. Do not press hard while rolling.


7. Keep the tava /pan on the fire and heat. Put rolled roti and cook on medium flame.
8. Press the rotti  slightly on edges with a wet towel or with spatula you use.


9. It starts to fluff up. Turn the other side and cook for a minute.


10. Take out roti from the tava and apply ghee on one side and place it on a tray or plate.



11. Prepare the same way with remaining dough.


12. Serve Hot Jolada Rotti with sides of your choice.

Note :

Try exactly what is said above. One should kneed the dough well. Dry flour should be applied to roll the rotti. Do not put any oil while cooking. Cooking these rotis on gas flame is optional. I did not cook on direct flame. Remember to use fresh flour to get good rotis.
Time : 30 to 35 Minutes.
Serves :  6 to 8 Rotis.

Channa Dal - Mango Fruit Chutney

Channa dal chutney is one of the traditional side dish. Here I have used mango fruit pulp instead of tamarind.

Channa dal chutney is prepared from ages. When guest arrives without notice or if the side dishes turns shortage in the night or when your tongue wants some yummy spicy chutney this channa dal chutney comes to in hand. It is very easy, tasty and simple chutney.
We can have channa dal chutney with plain hot rice and a spoon of fresh ghee. It goes well  with idli, dosa, chapatis or any type of roti or rotti. This chutney serves the purpose of dips, sides for pakodas, fried fritters and on bread spread.
I have used channa dal, red byadagi chilly, mango pulp and coconut.

No onion or garlic Recipe

Let us see the recipe now :

Ingredients :

Channa Dal : 1 Tablespoon
Red byadagi chilly : 3 to 4
Curry leaves : 6 to 8
Ingh/Asafoetida : A pinch
Coconut : 1 Cup
Mango pulp : 1 wild mango pulp
Salt : As required
For Seasoning :
Coconut Oil : 1 Teaspoon
Mustard seeds : 1/2 Teaspoon
Ingh/Asafoetida : A pinch
Curry leaves : 5 to 6

Method :

1. Wash and squeeze out the mango pulp


2. Grate coconut and keep it aside.
3. Keep a pan on the fire and heat. Add a teaspoon of coconut oil.
4. Add a tablespoon of channa dal and fry on low flame.


5. Add byadagi chilly and fry with channa dal. Let channa dal turn slightly golden brown.
6. Put off the fire and add curry leaves and ingh. Let all the ingredients get cool.
7. Grind it with mango pulp, fresh coconut, salt  and required water. Grind it till it gets paste consistency.


8. Remove it from mixi jar to a bowl.
9. Season with coconut oil, mustard seeds, 1 red chilly, curry leaves and ingh.
10. Channa Dal - Mango Fruit Chutney is ready to serve.

Note :

Do not over fry dal. Chutney turns bitter. Adding more / less chilly is optional. Adding tamarind instead of mango pulp is optional. Use of more coconut adds to the taste.
Time : 10 Minutes
Serves : 2 to 3.

Wheat flour Aloo Naan / Indian Bread

Naan, a type of Indian bread which is very famous and goes well with delicious curries is well known. I saw some one preparing Naan in the T. V. channal. Wanted to try some thing similar to it, but in a healthy way. So Here it comes Wheat flour Aloo Naan.


Norrmally Naan is prepared in Maida. / All purpose flour which is not a healthy to use it. So I replaced Maida with wheat flour, added boiled potatoes stuff and prepared yummy Aloo stuffed Naan.
 Wheat Flour Naan and it is cooked on tava.. ( Not on gas burner, which is bad for our health).
Potato stuff should be prepared first, so that you need not to wait to roll the naan.
Let us see the recipe Now :

Things Needed :

For the dough :
Wheat flour : 2 Cups
Millet flour : 1/2 Cup
Baking Powder : 1 Teaspoon
Baking Soda : 1/4 Teaspoon
Curd /Yogurt : 2 to 3 Tablespoons
Salt : A little /As required
Oil : 2 Tablespoons + 2 Tablespoons
Black Sesame Seeds : 1/2 Teaspoon ( Optional/To sprinkle on the top).
For Stuffing :
Potatoes : 3 ( Medium sized )
Garam Masala powder : 1/2 Teaspoon
Coriander leaves : 1 Tablespoon
Jeera/Cumin seeds/1/2 Teaspoon
Salt : As required : 1/2 Teaspoon

Method :

Aloo/Potato Stuffing
1. Wash and pressure cook 2 to 3 potatoes for 5 minutes and let it cool.
2. Peel off the outer layer and put them in a bowl.
3.Add required salt, garam masala powder, little jeera powder.
4. Wash and cut coriander leaves and cut into thin pieces. (Remove the leaves from its stick).
5. Smash them nicely and take a small portion and make like bonda (round ) shape.
6. Keep them aside.

Dough Preparation :

1. Take a big bowl and add 2 cups of wheat flour, 1/2 cup of millet/jola/jowar/Sorghum flour.
2. Add a teaspoon of baking powder, 1/4 teaspoon of baking soda/cooking soda to the flour.
3. Add 2 tablespoons of curd/yogurt and 2 tablespoons of cooking oil. Mix all the ingredients.


4. Prepare the chapati/naan dough. Add water only if required. The dough should be soft.
5. Allow the dough to rest for 5 to 10 minutes.


6. Now kneed the dough nicely and divide them into small portion.
7. Take a small portion of the dough and stuff aloo mixture and cover it from all sides.


8. Roll them on dry flour and roll it as chapati. It should done slowly without putting weight on it.
9. Keep a chapati tava/pan on the fire and heat. Wet your hand and press is it slightly on the rolled naan.
10. Take out the rolled naan slowly and place the wet side on the tava. Sprinkle a few sesame seeds
and coriander leaves on the top and press it slightly. So that it sticks to the Naan.
on the top.

11. Cook on both sides with low and medium flame.



 12.Wheat flour Aloo Naan is ready to serve..
13. Apply butter on the top and serve with a cup of curd pickle or any curry of your choice.


 14. Repeat the same and prepare the rest of naans.
Note :
The dough should be very soft. Adding millet flour makes the dough soft. Do not add more millet flour. You may not be able to roll them. Adding oil on the top of naan while cooking is optional. I have not added. I added butter on the top of Naan while serving. Cook on low and medium flame.
So that it does not get burnt. No need to rest the dough for a long time. Baking powder and baking soda turns the dough very soft.
You can cook this naan on the gas just after heating the naan on the tava you need to pace it on gas burner and cook. These days it is said cooking food on the gas burner is not a healthy option. So I decided to cook this Wheat flour Aloo Naan on the tava. (Both the sides).
Time : 40 Minutes
Serves : 2 to 3.

Wheat Flour Naan

Naan is a kind of Roti, and I have prepared this Naan with wheat flour and chiroti rava/Thin variety of semolina. 

Naan is a type of roti and most of the people love to have Naan. Normally Naan is prepared by using Maida/All Purpose flour.
This Naan recipe has no maida. I have used wheat flour and chiroti rava and to soften the naan I have used milk and a tablespoon of curd.
I have seen this this Naan preparing method in a T. V. Cookery show. Just changed maida to wheat and tried it and it turned as good and soft Naan. So prepared these Naan many times at my home
Now I can happily eat and enjoy these Naan because I am sure it is healthy.
I have used Wheat flour, chiroti rava/thin variety of semolina, milk, curd, oil and salt.
Naan turned as soft and yummy.
Let us see the recipe:

Ingredients : 

Wheat flour  : 2 Cups
Chiroti Rava/Thin variety of Semolina : 2 Tablespoons
Milk : 1/2 Cup
Curd : 1 Tablespoon
Oil : 2 Teaspoons.
Salt : A little
Cooking Soda : A pinch
Bowl of water

Method :

1. Mix wheat flour, chiroti rava/semolina, oil, salt, cooking soda and mix it well.
2. Add milk and curd to the mixed flour and prepare dough. Add required water while preparing the dough.
3. Let the dough rest for 20 minutes.

4. Now keep a pan on the fire and heat.
5. Divide the ready dough into small portions. Take a small ball size of dough and roll as chapati or reetangle shape.
6. Sprinkle a drop of water on chapati and put it on the tava and press a little. Cook on medium heat.

7. Sprinkling water helps the chapati to be moisture and helps to cook with out oil.
8. It starts to bubble up on chapati.

9. Remove this chapati and put it on a burning gas and cook fof 10 to 20 seconds.

10. It should be roasted well on the other side.
12. Put it on the plate and apply butter on the top.

13. Naan is ready to serve. Serve " Hot Naan" with the curries of your choice.

14. Repeat the same with remaining dough and prepare Naan.

Note:

Let the dough be soft so that Naan turns as soft. Adding milk and curd makes the dough soft. Adding butter instead of oil is optional. You can sprinkle sesame seeds on the top of Naan. ( Optional).
Moisture on the top helps the naan to cook well. (You can press the rolled naan to tava and then hold it on gas burner. It helps you to do the process bit easy. Naan sticks to tava and you can turn the tava upside down to cook upper layer of Naan. Hot Naans is better to have or it might turn bit hard.(Dry).
Time : 30 minutes.
Serves : 3 to 4 ( 8 Naan can be made, according to the size ).

Tambuli & Wheat Flour Rotti

 Tambuli is a gravy dish which is prepared using Palak and Dil leaves and combined with cup of curd. This Tambuli as we call in Kannada is served in the beginning, is mostly eaten with rice. Tambuli helps to keep your body cool and is very healthy dish. You do not feel thirst after the meal. There are different varieties of Tambuli and prepared mostly using the same ingredients. We use pepper pods, jeera and just one red or green chilly with a spoon of fresh coconut. Jeera and pepper pods along with red chilly fried in ghee and then added the leaves. The leaves are nicely fried along with pepper pods. When the fried ingredients cool down it is ground with fresh coconut and butter milk.(very little to grind).  Salt and More butter milk or curd is added to ground paste and mixed with fried jeera, ingh and curry leaves.  This is how we prepare Tambuli and  eat and serve. Normally tambuli is not prepared in the night, because the reason is the body may develop cold. Not only that using the savoury buttermilk or curd might disturb our sleep.
I wanted to make use of the remaining Tambuli so thought of mixing that with wheat flour and preparing the Rotti. I love rotti and enjoy, any time of the day. For Wheat Rotti I have used wheat flour, fresh coconut, onions, ginger and green chilly.

Let us know some benefits of having Palak in our diet.
Spinach (Palak) is a store house for many  nutrients. They are very low incalories and fats. Palak is rich in soluble dietary fiber and it helps to control cholesterol. They are also rich source of several vital anit -oxidant vitamins like Vitamin A, Vitamin C and Vitamin K which helps to build a strong bones. They contain good amount of many B- complex vitamins like vitamin -B 6 and Vitamin B. Palak leaves contain good amount of minerals like potassium, magnesium, copper, iron and zinc. It is also good source of omega - 3 fatty acids.
Tambuli can be eaten with plain rice or it can be one of the side dish for masala rice or chapati.

1. Tambuli 

Things Needed :
Palak leaves : A small bundle or 1/2 of one bundle.
Dil Leaves : Handful.
Curd  or butter milk : 1 Cup
Jeera : 1/2 Tea spoon
Methi seeds : 4 to 5 
Pepper pods : 4 to 5
Red or green chilly : 1
Ingh : a pinch
Ghee : 1 Tea spoon
Coconut : 1 Table spoon
Curry leaves : 4 to 5
Salt : To Taste

Method :

1 Wash and cut leaves and keep it aside.
2. Grate coconut and keep it aside.
3. Keep a small pan on the fire and heat. Put 1/2 Tea spoon of ghee. Add  methi seeds, jeera and pepper pods. Fry for 10 seconds.

4. Add palak leaves and red chilly. Fry nicely for 2 minutes. Put off the gas and let the ingredients cool down.
5. Grind coconut and fried ingredients. little ingh and salt nicely with very little water. Remove from the mixi jar. 

6. Add a cup of curd or butter milk and mix it well.
 7. Keep a pan on the fire. Add ghee and 1/4 spoon of jeera. Fry for 10 seconds and add curry leaves.  Put off the fire.
8. Add this fried jeera to Tambuli.  and serve as one of the side dish during lunch.

Note :

Do not burn jeera while frying. Fry on low flame. I have used red chilly. ( green chilly can be used instead of red chilly).
You can add little curd while grinding the fried leaves instead of water. But I used water.
Time : 10 minutes
Serves : 3 to 4

2. Wheat flour Rotti 

Things Needed :
Wheat Flour :  2 Cups.
Tambuli : 1 Cup
Onions : 2
Coconut : 1/2 Cup
Green chilly : 1
Ginger : an inch 
Coriander leaves : 2 Table spoons
Curry leaves : 6 to 8
Salt : Required
Oil : 1/2 Cup

Method : 

1. Remove the outer skin of onions, wash it and cut them into small. Keep it aside.
2. Wash green chilly, curry leaves, coriander leaves and cut it in to small.
3. Grate coconut and keep it aside. Wash and remove the outer skin of ginger wash it again and grate it.
4. Now take a big bowl and put wheat flour, Tambuli , onions, green chilly,  ginger, and coconut all together.
5. Add salt and mix it nicely. Add water if required.
6. Keep a pan on the fire. Heat. Sprinkle some oil around the pan.
6. Take a handful of rotti dough and spread it around like dosa on the pan. ( Use fingers to spread).
7. Sprinkle one spoon of oil on the top, cover and cook for 1 to 2 minutes.
8. Turn the other side and cook for 1 minute. . Repeat the same with remaining rotti.

9. Wheat flour rotti is ready to serve. Serve with the side dish you prepared

 10. Serve Hot Wheat Rotti with a spoon of ghee on the top of Rotti.

Note : 

You can use rice flour or rava or Jowar ( Jola ) instead of wheat flour. You can also add grated carrots instead of onions.
Using more or less oil is optional.Do not make the dough watery. It should be able to spread on the pan. Thin or thick rotti can be prepared. (optional)
Time : 30 Minutes 
Serves : 3 to 4
