ಉಡುಪಿಯ ಗಟ್ಟಿ ವಡೆ /ಅಕ್ಕಿ ವಡೆ/ Boiled Rice and Rice flour Vada.


These Rice Vadas are very famous and yummy. You go on munch these vadas and get pulled to pop one more.
These Vadas are prepared using Kocchaakki, rice flour or rice, coconut and salt.
Let me 
Things Needed :
Boiled Rice : 1 Cup
Rice flour (Raw Rice flour) : 1 Cup or little more 
Butter :1 Tbs
Coconut gratings : 1 Cup
Salt : To taste.
Oil : 2 Cups : To Fry

Method :
Wash and soak boiled rice for 4 to 5 hours. (In plain water)
Grind it with 1/2 cup of coconut and take it out from the mixi jar.
Add rice flour, remaining coconut, salt and mix it well.
Keep oil for heating. Let it get hot. \
Kneed the rice vada dough nicely and divide them into small portion.
Take a small portion of the dough and pat on your hand and fry in hot oil.
Fry on both side till it is cooked.
Take it out to a kitchen tissue and repeat the same with remaining dough.
Gatti Vada is ready to serve or eat.
Note :
Do not add much water while grinding boiled rice.
Adding more coconut adds to the taste. 
Do not add lots of butter. It might break while frying.
You can also add little jeera while mixing the dough.
Time :
Soaking Rice 5 hours  + grinding 10 minutes + frying 20 minutes.
20 to 25 Vadas can be prepared. (According to size).

Bitter Gourd / Maadu Haagala Kayi Pakoda

Maadu Haagala Kayi / One of the Indian Type of Bitter Gourd is grown in Indian Karaavali / South Indian Vegetable. I got this from here in Bangalore in Our Mangalore Store. Though bitter gourd is normally bitter this variety is not at all bitter. We do use this for curries and other Bajji / Pakodas.



Here is a simple Pakoda, prepared with Maadu Haagala/ Bitter Gourd.
Maadu Haagala /Bitter Gourd (a variety of bitter gourd), which is normally grown on the top of housed in village. It is a climber and spreads nicely on top and so it is called Maadu Haagal Kayi.
 I have used Maadu Haagala Kayi, besan/chenna flour/gram flour, rice flour, jeera, chilly powder and salt. No soda or baking powder is used. I use Safola Oil for frying.

Things Needed :
Maadu Haagala Kayi : 3 to 4

Besan/Gram flour/kadlehittu/ Channa dal flour : 1 Cup
Red Chilly Powder : 1 Tsp
Rice flour : 2 Tbs
Jeera/Cumin Seeds :
Salt : As required
Coriander Leaves : 2 Tbs
Oil : To Fry : 1 Cup

Method :

1. Wash and scrape out the outer layer in thin layer of Maadu Haagalakayi.
2. Cut into circle shape.

3. Take a big bowl, add a cup of besan/gram flour, chilly powder, salt and mix it well.
4. Add rice flour, add required water and mix it well. The batter should be like idli dough consistency. Add washed and cut coriander leaves.


5. Keep frying pan and add oil. Heat oil.
6. Dip the pieces in ready batter and put it slowly in hot oil.



7. At time you can put 4 to 5 pieces and fry. Fry on both sides.


8. Take it out and put it on a kitchen tissue.

9. Serve Hot Maadu Haagala kayi Pakoda with your choice of dip.

Note :

Let the batter be bit thick, so that it turns fluffy and nice to eat. Adding any other spice like garam masala, chat masala etc is optional.
Time : 20 Minutes
Serves : 3 to 4 .

Millet Mirchi Bajji /Fried Fritters

Mirchi bajji is famous fried fritters these days. Mirchi bajji goes well with a cup of coffee/chai or any other fruit juice.

I have tried this Mirchi bajji using millet flour, besan /channa dal flour, curry leaves chutney powder and other spices. Just wanted to try this fritter with millet flour and it has turned nicely with crispy and soft texture. It has a good taste and of course it is a good choice for having with lunch as a bite by the side.

Things needed :

Mirchi /Bajji Chilli : 3 to 4
Millet flour : 2 to 3 Tablespoons
Besan / Channa Dal Flour : 2 to 3 Tablespoons
Curry Leaves Chutney Powder : 1 Tablespoon
Chilly powder : 1/2 Teaspoon
Jeera / Cumin Seeds : 1/2 Teaspoon
Salt : As required
Oil : to Fry : 1 Cup

Method :

1. Wash and remove the seeds in Chilly. Slit them in the middle. / You can cut them into two in the middle.
2. Take a big bowl and add millet flour, besan / channa flour, curry leaves chutney powder, salt, chilly powder and jeera/cumin seeds. Mix it well.
3. Add water and prepare the batter. ( Let it be medium thick).


4. Keep a pan on the fire and heat. Add a cup of oil. Let it get hot.
5. Dip each chilly in the batter you have prepared and fry them on medium flame.


6. Turn the other side and fry till they turn golden brown.

7. Remove from the oil and put it on a kitchen tissue.


8. Millet Mirchi Bajji /Fried fritter is ready to serve.


9.Repeat the same and prepare the remaining bajji.
10 Serve as you wish, with a cup of coffee / tea or a cup of juice or for lunch as a bite like papad.




Note :

Careful while you prepare the batter. Let the batter be medium thick. Adding any spice is optional. Curry leaves chutney powder adds to the taste. Adding more chilly powder is optional.
Fry on medium flame so that it cooks well and chilly turns crunchy.
I have the big chilly into two. So that it is easy to fry. No cooking soda is used here.
Time : 20 Minutes.
Serves : 2 to 3.

Roasted Chenna - Avalakki Chakkuli

ಚಕ್ಕುಲಿ/ ಚಕ್ಲಿ ಚಕ್ಕುಲಿ/Chakkuli is a famous fried crispy and crunchy munching snack. 
There are many ways to prepare this Chakkuli/Chakli. I have tried and tasted varieties of chakkuli.
Here is one more way that you can prepare yummy, crispy chakkuli and you can enjoy then at any time of the day.
All you need is fine variety of rice flour, avalakki/thick variety of poha, roasted chenna and little butter. Red chilly powder, sesame seeds, jeera / cumin seeds and salt.
Let us see the recipe now :

Things Needed :

Rice Flour : 3 Cups
Avalakki/Thick Variety of Poha : 1 Cup
Roasted Chenna/Huri Kadale /Putaani : 3/4 Cup.
Salt : As required
Sesame seeds : 1 Tablespoon
Chilly Powder : 1 Teaspoon
Butter : 2 Tablespoons
Oil : 2 Cups ( To Fry chakkuli ).
Chakli Mould .

 

Method : 

1. Clean sesame seeds and keep it aside. ( I have used black sesame seeds).
2. Clean and powder avalakki in a dry mixi jar. ( It should be fine powder).
3. Powder roasted chenna and keep it aside.

4. Take a big bowl and put rice powder, ground avalakki, ground roasted chenna, butter, rice flour, salt, sesame seeds, red chilly powder and mix it nicely.
5. Add water ( little by little) and mix all the ingredients nicely and prepare chakkuli dough.


6. Keep a frying pan on the fire and heat. Add oil, let it get hot. ( On medium flame).
7. Divide the chakkuli dough into small portions.
8. Wash chakli mould and fill in small portion of the dough and roll the top portion of the mould.


9. Squeeze out chakli dough in hot oil and fry on both sides till they turn slightly golden brown.

 10. Remove the done chakkuli and put it on a kitchen tissue, so that extra oil will be absorbed by the tissue.

11. Prepare chakkuli with remaining dough.

12. Let it cool. Put them in a air tight box and serve/eat.

  Note :

The chakli dough should be soft, you need to kneed the dough nicely. It should not be watery. ( It might absorb more oil). Adding chilly powder is optional. Adding white sesame seeds is optional. Do not add more butter. The dough will turn very soft and it will be curdled in oil while frying.
Time : 40 Minutes.
Serves : 2 Medium sized bottles.

Maddur Vada ( NoMaida )

Maddur Vada is a fried fritter which has become very famous. It can be prepared in many ways. I have used wheat flour and little semolina/rava and rice flour.


Maddur is a small place near Mandya in Karnataka/India. May be this type of Vada is prepared first time in this place and must have got the name as Maddur Vada. You can lots of vendors selling Maddur Vada even in trains and bus stops.
I have used prestige vegetable cutter to cut onions, curry leaves and green chilly. The vegetable chopper helps to chop onions into thin pieces and it helps very much for mixing all the ingredients.
Let us see the recipe Now :

Ingredients :

Rice Flour : 2 Cups
Wheat Flour : 2 Tablespoons
Rava/Semolina/Medium sized : 1/2 Cup
Onions : 2  (Medium sized)
Green chilly : 2 to 3
Curry Leaves : One handful
Salt : As required
Jeera /Cumin Seeds : 1/2 Teaspoon
Cooking Oil : 1 Cup + 2 Tablespoons


Method :

1. Remove the outer layer of onions and wash it.  Cut it into big pieces ( 1 into 4 )
2. Wash green chilly, curry leaves and keep it aside.
3. Keep a pan on the fire and dry roast wheat flour till the raw smell goes off.  ( 2 to 3 minutes).
4. Take a big bowl and put rice flour and rava/semolina. Add roasted wheat flour to it. Add required salt.


5. Now chop onions, green chilly and curry leaves into small pieces.
( I have used a prestige chopper to chop all the above ingredients).

6 Put all the cut onion mixture to rice flour bowl.
7. Keep a small pan on the fire and put 2 tablespoons of oil. Heat it till its hot.
8. Pour this hot oil on the rice flour and leave it to cool.

9. Mix it well and then add water and prepare thick dough. ( Be careful while adding water).
10. Divide the dough into small portion.

11. Wet /take a drop of oil to your palm, take a small portion of dough and flatten with your fingers.
12. Keep  a frying pan on the fire. Add oil and heat.
13. Fry flattened Madduru vada in low and medium flame. Fry on both sides till golden brown.


14. Remove it from the hot oil and put it on  kitchen tissue.
15. Repeat the same and prepare the remaining vada.


16. Maddur Vada is nice to eat with a cup of coffee or tea or at any time of the day.


Note :

Do not put more water while preparing the dough. It the dough turns watery add little rava or rice flour to make the dough bit thick. Adding more hot oil might turn Vadas very soft and it might break in to small pieces while frying. Adding more onion is optional. Adding garlic to vada is optional.
I have not added garlic, since I do not like it. Let the dough be bit thick. I have used prestige manual chopper to cut onions, chilly and curry leaves. It helps the vegetables cut very thin, easy and avoids messy work.
Time : 30 to 40 Minutes.
Serves : 15 to 20 Maddura Vada can be prepared. According to size.
