Quick Paneer Bites

Paneer is a milk solid and is filled with proteins. I have prepared quick bites using Nandini
Paneer. It is an easy, quick, simple and healthy bite.


I have used Nandini Paneer, chilly powder, jeera powder, garam masala and chat masala. Added a teaspoon of curd and mixed the spices and rolled the paneer pieces in spice mixture. Left that for rest for 10 minutes.

Let us see some benefits of eating Panner in our diet.

Cottage cheese /Paneer is rich in protein. It helps to strengthen our bones and teeth. It is good for improving our digestion. It also maintains the blood sugar levels in our body. It is a rich source of proteins, magnesium and folate.

Ingredients :

Paneer : 250 Gr.
Curd /Yogurt : 1 Tablespoon
Chilly Powder : 1/2 Tsp
Pepper : Crushed : 2 to 3 pods
Garam Masala powder : 1/4 Tsp
Jeera /Cumin Seeds : 1/2 Tsp
Chat Masala powder : 1/4 Tsp
Salt : As required
Cooking Oil : 2 Tbs

Method :

1. Cut Paneer into desired shape and size.


2. Take a big bowl and Put curd, salt, garam masala, chilly powder, Crushed pepper and jeera.
3. Mix all the ingredients nicely and add paneer. Slowly stir and leave it for 5 to 10 minutes.


4. Keep a pan on the fire and heat. Add a teaspoon of oil and place paneer one by on hot tava.
5. Sprinkle some oil on top and by the sides. Cook on both sides on medium flame.


6. Shift it to a serving dish and sprinkle some chat masala on top and serve.

Note :

You can add more spices of your choice. I do prepare dishes with mild spices. You should cook on both sides till golden brown. Cook on medium flame. Cooking the whole process on low flame will turn Paneer hard. Adding more oil is optional.
Time 20 Minutes. : All together.
Serves : 2 to 3.

Wheat Fruit basket Chat

Wheat Fruit Basket is a chat. It is my own creation. It is healthy, easy and creative I can say.
Just had some thing in mind and gave a try, it has come out nicely and of course healthy.


I have used wheat flour and fruits like apple, pomegranates with little chat masala.
The baskets are made with wheat and chiroti rava/thin variety of semolina.
Try and enjoy this Wheat Fruit Basket Chat.
Wheat baskets are easy to prepare.
These Wheat baskets are prepared with wheat flour and chiroti rava.
Let us see the recipe now :
Let us prepare wheat basket first and then proceed to fruits

Things Needed :

Wheat Baskets 

Things needed :

Wheat flour : 2 Cups
Chiroti rava/thin variety of semolina : 2 Tablespoons
Jeera /Cumin Seeds : 1/2 Teaspoon
Ghee : 1 Tablespoon
Salt : As required
Oil : To fry : 1 Cup
A Steel glass
Fruits Filling :
Apple : 1
Pomegranate : 1
Honey : 2 Tablespoons
Chat Masala : 1/4 Teaspoon
To Add :
Fried Corn flakes. (Purely optional).

Method :


1. Take a big bowl and add wheat flour,jeera, ghee and salt. Mix it well and then add water to prepare poori dough.

2. Add 2 tablespoons of chiroti rava and then mix it with dough. Kneed the dough well and keep it aside.

3. Now divide the dough into small portions.


4. Roll them as small chapatis.
5. Take a steel glass. Put it up side down.
6. Take a rolled chapati and put it on the bottom around the glass. ( Only 1/4 of the glass ).
7. Just give a basket shape and keep it aside. Let the chapati stick on the bottom of the glass.


8. Keep a pan on the fire and heat. Add oil and let it get hot. ( Medium flame).
9. Now take a glass with the help of holder and dip in hot oil.


10. Slowly the basket comes out of the glass bottom. Fry on both sides and remove the wheat baskets once it is done. (Fry on low and medium flame). Put it on a kitchen tissue.


11. Repeat the same and prepare the remaining baskets.


12. Wash and peel off the apple skin and seeds. Cut it into small pieces.
13. Remove pomegranate seeds and put it with apple pieces.


14. Mix the fruit pieces with honey and chat masala. Mix some rose petals. ( Optional).
Mix it nicely. Keep it aside.


15. Now arrange the wheat baskets in a tray and fill it with fruits mixture. Top up with fried corn flakes and serve. Adding corn flakes on the top is optional.





Note :

Let the dough be bit tight. Adding chiroti rava helps to add the crisps to wheat baskets.
Adding any fruit pieces is optional. I have added some rose petals with fruits. (purely optional).
You can also add onions and carrot gratings and make spicy wheat basket.
Time : 40 Minutes. 
Serves : 3 to 4.

Pav Bhaji : My Style

Pav Bhaji is one of the famous street food which is liked by so many around the world. Spicy, filled with veggie and yummy Pav Bhaji is always loved and invited by the hungry stomach. Its healthy and stomach filling food too. Pav is nothing but a bun (a special type of bun) and bhaji is spicy curry.

Here is a simple, quick and yummy " Pav Bhaji " and I have used vegetables, some spices/masala and Pav is heated on tava with little butter. I am sure we fall love in having Pav Bhaji and definitely prepare this evening.
You can have this Pav Bhaji for the breakfast (tummy full), as snack in the evening time or for dinner.
Remember to use less spice which helps to keep you fit and fine. It is always better to use less spice because you may feel not only thirsty and lazy, spice effect cause chest burn and other problems because of more spice in the curry.
No Onion or Garlic is cooked in this " Pav Bhaji ". (Cut onions are used as raw to add it to the curry. Purely Optional.
Use of pressure cooker to cook vegetables because it helps to retain health content in vegetables.
Lets see the recipe now :

Things Needed :

To Pressure cook :
Carrots : 2
Potatoes : 2 to 3
Peas : 1 Bowl
Tomatoes : 2
To Add :
Pav Bhaji Masala (Mayyas) : 1 Teaspoon
Jeera/Cumin Seeds : 1 Teaspoon
Jeera Seasoning : 1 Tablespoon
Grated Ginger : 1 Teaspoon
Salt : As Required
Turmeric powder : 1/4 Teaspoon
Chat Masala : 1/2 Teaspoon
Butter : 1 Tablespoon
Coriander Leaves : 2 to 3 Tablespoons
Lemon : 1/2 Lemon extract.


Method : 

1. Wash and remove the outer layer of all the vegetables. Cut into small pieces. Slit green chilly.
2. Wash fresh peas. Now put cut vegetables and peas to pressure cooker.
3. Add little water to the vegetables and cook for 5 to 6 minutes. Wash and remove the outer layer of ginger and wash it again. Grate it and keep it aside.
4. Remove the lid once the pressure cooker is cool.

5. Add salt, turmeric powder, pav bhaji (Mayya's ), jeera powder and smash the vegetables nicely.
6. Add very little water and cook for 2 minutes. Add grated ginger.

7. Mix it well.. Let it cook for a minute.
8. Keep a small pan and put oil. (1 Tablespoon). Add slit chilly and fry nicely.
9. Add this to cooked Bhaji and mix it well.

10. Add 1/4 Teaspoon of chat masala and mix it nicely. Add a tablespoon of butter and let it melt.

11. Mix bhaji nicely and put off the fire. Shift the ready curry to a bowl, Add coriander leaves and 1/2 lemon extract. .

12. Cut Pav in the middle and put it on a hot tava. Put little butter on each side.
13. Let it turn slightly golden brown. Put it on a plate.

14. Serve Pav bhaji with cut onions on the side. (Or put some cut onions on the top of bhaji).

Note: 

Use of pressure cooker is optional. You can use a tava to mix all the ingredients nicely. Smashing the vegetables is an optional. Adding more spice is optional. Mild spice is always better. Use of cut onions on the side is optional. (You can use cucumber pieces instead of onions). Adding more/less butter is optional. Butter not only adds to the  taste helps to reduce the spicy taste.
Time : 15 Minutes
Serves : 4 to 5 .

Apple-Pomegranate filled Pani Poori

Pani Poori who does not like it? Each and every corner you see a pani poori seller and people around him. It is such a tempting chat that you too feel like having some. Now a days even in marriage halls during the wedding reception too you get a chance to have Pani pooris.These chats are like that. They make your mouth watering by tempting your togue.

Pani pooris are small pooris, filled with spicy water along with some vegetables.
Here I have used sweet potatoes, potatoes, pomegranate&apples. For the pani (spicy water), I have used some jeera, chilly, pudina and other ingredients.
Lets see the recipes now:

All you need is :

Boiled Sweet Potato : 1 (Big) (boiled and cut into small)
Potato : 1 (Medium size) (Boiled and cut into small)
Khara Boondi : 1 Bowl
Pomegranate : 1
Apple : 1 (Red/Green : of your choice)
Sweet and Spicy Chutney : 1 Small cup

Method :

1: Wash and remove the pods from pomegrante and keep it aside.
2. Wash and remove the outer layer of apple and cut it into small piece.

3. Prepare or buy kara boondi and put it in a bowl and keep it ready. ( I have prepared khara boondi at home)
4. Keep the pooris in a big tray. Keep cut sweet potatoes and potato pieces in a bowl.

5. Make a small whole and fill in pomegranate, cut apple.
6. Add a spoon of khara boondi on the top.
7. Fill the poori with spicy water and serve immediately.

8. You can add a spoon of thick curd on the top and serve too (Optional).


Note :

One should eat this pani poori as soon as you pour spicy water in it. You can prepare pooris at home.
You can prepare khara boondi at home easily.
Time : 15 to 20 minutes.
Serves : 4 to 5.

a) Poori preparation :
Put a cup of chiroti rava (1 cup), wheat flour (2 Tablespoons), a little salt and one tablespoon of corn flour in big bowl.
Mix it with required water and prepare chapati dough. Add a teaspoon of oil on the top and leave it for 10 minutes.
Now roll on with roller and prepare big chapatis. Cut it with a small bottle cap and remove the small pooris and arrange them on the plate.
Now keep a frying pan on the fire. Add a cup of cooking oil. Let it heat.
Fry pooris on both sides. You can fry at least three small pooris at time.
Repeat the same with remaining dough and prepare pooris.
Keep the pooris aside.
Note : 
The chapati dough should be thick. Roll it as thin sheet, so that pooris turn crispy.
I did not add much oil while kneeding the dough.
b) Khara Boondi :
Mix a cup of besan, little salt and a spoon of oil.
Mix it well and add water and prepare dough.
(Should be idli dough consistency).
Now keep a frying pan on the fire and heat. Put a cup of oil and let it be hot.
Take a boondi laddle and pour a big spoon of dough on the boondi jar.
Let the boondi drops fall in hot oil. Let the both sides be crisp.
Remove from the hot oil and put it on a kitchen tissue.
Repeat the same with remaing dough.
A bowl full of khara boondi is ready to serve.
Note :
Let the dough be thick not watery. If you use more water it might absorb more oil. Use a pinch of cooking soda helps the boondi to be crispy.

c ) Sweet and spicy Chutney
Wash a bunch of coriander leaves and a bunch of pudina (mint) leaves and cut into small.
Wash 2 green chilly.
Grind pudina, coriander leaves, half teaspoon of jeera, a marble size of tamarind, 5 to 6 dates, (remove the seeds), a lttle jaggery and required salt with minimum water. Let it grind into thin paste.
Remove to the bowl and rinse the mixi jar with littlewater. Keep this water aside.
Note :
Do not add much water while grinding. Spicy chutney and sweet chutney can be prepared separately.
Use the spicy mixture and grind it nicely and remove to a small bowl. Grind jaggery, dates and little tamarind separately and put it into a bowl. Use it according to your wish.
I used all the ingredients "Sweet and Spice" together and prepared mixed chutney.
These things can be prepared previously /or before. This chutney can be stored in the freezer for a long time.
