Besan & Coconut Burfi

Besan & and Coconut Burfi is a sweet dish and we can enjoy having them any time of the day. This sweet is similar to "Seven Cups burfi ". The whole process takes about 30 to 40 minutes and ready burfi is yummy to eat. It just melts in the mouth.
Preparing some thing nice and tasty is real fun. You get to enjoy the product when you distribute it and get good words after they munch the sweet.
I have used besan, ghee, coconut, sugar and some almonds. Added almonds powder in the burfi and spread the almond flakes on the top of the burfi too
Lets see some benefits of having Channa flour in our diet;
Besan/chickpea flour/Kadale hittu is naturally higher in protein. Besan is healthy and it contain unsaturated fats and low in cholesterol. It contain fiber. It has vitamin c and vitamin B 6 Thaiamin converts food into energy. Besan contain iron, magnesium and phosphorus. It helps to regulates blood pressure and build bones. Besan flour does not contain gluten.
Besan & Coconut Burfi is easy to prepare, have little patience and stir on low flame till it turn thick.

Things Needed 

Besan/chickpea flour : 1 cup
Milk : 1 Cup
Ghee : 1 Cup
Coconut : Grated : 1 Cup
Almonds :1 Cup
Sugar : 2 1/2 to 3 Cups
Cardamom : 5 to 6

Method :

1. Grate coconut and keep it aside.
2. Melt ghee into liquid form and keep it aside.
3. Powder cardamom into powder with little sugar and keep it aside.
4. Cut 1/2 cup almonds into rakes and powder the remaining almonds and keep it aside.



5. Now dry roast besan till the raw smell disappear.(3 to 4 minutes). Allow it to cool.
6. Take a big pan. Add milk, sugar, coconut, roasted besan, 1/2 cup of ghee and powdered almonds. Mix it well.

7. Mix it well nicely and keep that mixture on the fire. Let it be on low flame.


8. Keep stirring till it turns thick and starts leaving the pan. Stir for some more time. (may be another 5 minutes).

9. Add remaining ghee and keep on stirring. When the ghee mixes well and the burfi thickens. Add cardamom powder and stir.


10. Put the burfi mixture on a greased tray or greased plate.


11. Sprinkle almonds rakes on the burfi and press it with a spatula.
12. Let the almond pieces stick to the burfi. Leave it for 5 minutes and cut it according to your wish.
13. Remove the pieces slowly and serve them. 
 14. Put the remaining pieces in a airtight box and store it. It can stay for a week.

Note :

The whole process should be done on low flame. (or it might get burnt and will be waste). Adding more sugar helps the burfi to be thick fast. Adding more ghee is optional. It adds to the taste. (another 1/2 Cup of ghee). Adding almonds is optional. (It adds to the taste).
Time : 30 minutes
25 to 30 pieces can be made.

Oats, Corn Flakes & Almond Laddu : Deepavali Special

Oats, Cornflakes & Almonds Laddu is a sweet dish and we can munch them any time of the day. Deepavali is nearing and the preparation of sweets and savoury starts. Oats & Cornflakes, Almond Laddus are healthy and perfect for festival celebration. It is easy to prepare and can be kept for at least 10 to 15 days. It is my own creation and I am very happy to say Oats, cornflakes & Almond Laddu is delicious to eat and not worry much because there is not much of ghee and no coconut is used in this recipe. One more good thing is that instead of sugar, jaggery is used and you must be knowing the benefits of having jaggery instead of sugar. It contain loads of healthy benefits.
Lets see some benefits of having jaggery in our diet.
Jaggery helps to cleanse our body and act as digestive agent. It provides good amounts of minerals. It adds sweet to the dish in a healthy way. It is always better to use jaggery. It prevents constipation and good for people who suffer from anemia. It has excellent source of Iron and produce good amount of haemoglobin. It helps to detoxify our liver by flushing harmful toxins from our body. It is also good for cough and cold.
I have used Oats, cornflakes and Almonds, a few cashew nuts and raisins.
Oats, cornflakes & Almonds Laddu can be prepared for festivals, kitty parties, kids parties and even you can box them and give it as sweet packs.
Lets see the recipe now.

Ingredients :

Oats : 1 Bowl
Corn flakes : (any brand ) : 1 Bowl
Almonds : 1 Small cup
Raisins : 1/2 Cup
Cashew nuts : 1 Handful or as you wish
Ghee : 2 to 3 Tablespoons
Jaggery :  5 to 6 Tablespoons (Grated ) or 1 small bowl.

Method :

1. Keep a pan on the fire and dry roast oats on low flame for  2 to 3 minutes and keep it aside. Let it cool.
2. Now add cornflakes to the same pan and add 1 teaspoon of ghee. Fry them nicely and remove from the pan .(2 minutes).
3. Fry almonds in the same pan for one to two minutes and remove from the pan. Let it cool.
4. Now fry cashew nuts and raisins till they turn golden brown and remove from the pan. Keep them aside.
5. Dry grind all the roasted or fried ingredients and keep is separately. ( Dry grind them one by one). (Except cashews and raisins).
6. Keep a bigger pan on the fire. Add powdered or grated jaggery and add 1/4 of water to it.
7. Let jaggery melt nicely. It starts to boil. Let the jaggery syrup get one string consistency.


8.Now add powdered cornflakes, oats and almonds. Mix it well. Add fried cashews and raisins. Mix it thoroughly. Put off the fire and    shift the mixed ingredients to a big bowl.
9. Add 1 to 2 tablespoons of ghee and mix it well.
10. Take a small portion of well mixed laddu mixture and form a laddu. Press it nicely between the palm and fingers and give a ball shape.Prepare the same with all the ingredients,

11. Oats, cornflakes and almond laddus are ready to serve.

12. You can pack them in a box and give it to your near dear ones.

Note :

Frying cornflakes in ghee gives good aroma to laddu. It is better to dry roast oats as we dry grind it. Adding more almonds adds taste to the laddu. Raisins help to add sweet taste. Adding more cashew adds to the taste. Just take care while preparing jaggery syrup. When it melts completely, it starts to bubble. Let it boil for 1 to 2 minutes. Then add the ground powder of ingredients and mix it well. Adding coconut is optional. I have not added.If you are not able to form a ball shape and the mixture is bit dry, sprinkle some hot milk and then prepare laddu. Hot milk helps the mixture to hold it. You can use dates instead of jaggery. (10 to 15 dates should be dry ground and add it to the mixture and then prepare laddu).
Time : 30 minutes.
Serving : 20 Laddu can be prepared.

Quick Almond Burfi

Almond Burfi is a sweet dish and this is one of the easiest way to prepare burfi in5 to 10 minutes. Preparing Burfi is a long procedure. This particular recipe is done in very easy way. I have seen one of my friend preparing quick almond burfi. I too have prepared this many time. Each time its yummy burfi time.

You all know kids love to have these burfi and elders do not mind munching them now and then. It is one of the party dish too. You can have them at any time of the day.
Lets see some benefits of eating Almonds in our diet. 
Almonds are nutritious nuts and they are loaded with healthy benefits. They are loaded with minerals. Almonds are rich in vitamin E, Calcium, magnesium and potassium. Almonds are a significant source of protein and fiber. They are low in sugar. It is low in saturated fat no cholesterol or salt. They are good for heart health.They are good for people who want to loose weight. They also help to control diabetes. Almonds also help to regulate the blood sugar level in our body.
It is easy to prepare, no soaking, no peeling off the skin. Try it out . You all love it.

Things Needed :

Almonds : 1 Cup
Sugar : 1 Cup
Milk Powder : 1 Tablespoon
Water : 1/4 Cup
Cardamom : 3 to 4 pods (Optional)
Ghee : 1 Tablespoon

Method :

1. Remove the seeds from cardamom.
2. Dry grind almonds and cardamom seeds till it turn into powder. Remove from the mixi jar and keep it aside.
3. Keep a pan on the fire. Add water and sugar. Mix it well. Let the sugar melt nicely.
4. Sugar syrup starts bubble. Let the syrup gets one string consistency.
5. Add powdered almonds to the sugar syrup. and keep stirring.
6. It starts to leave the pan. Stir little more. Add milk powder and stir for another 3 to 4 minutes. (On low flame).
7. Now put the mixture in a ghee spread tray. Allow it to cool for 3 to 4 minutes.
8. Cut it according to your wish and serve tasty burfi.

Note : 

You can add more ghee if you wish. (Optional). Do the whole process on low flame. You can also add half portion of cashew (half cup almonds - half cup cashew nuts).  ( I have not added cashews here). Let the sugar melt and mix it nicely, then you add the almond -cardamom mixture.
Time : 15 minutes.
Serrves : 15 small pieces. (pieces according to your wish).

Almonds - Walnuts Burfi.

Burfi is a sweet dish and can be eaten at any time of the day. Here is a burfi, prepared with Almonds and Walnuts. It can be prepared quickly and it is delicious to have. I had prepared this burfi when my relatives said, they will be coming home. I was planning of preparing of Almonds and Walnuts burfy since long time and now it suddenly flashed me.Anyways I had these main ingredients at home and I could do it with in a few minutes. The result was really good. Almonds and Walnuts burfi just melts in the mouth and you can really enjoy each bit of it. Try it out and you will appreciate.
Lets see the benefits of dry fruits in our diet.

Nuts and dry fruits help in increasing metabolic rates. They are great source of energy and fibre. Dry fruits do not contain fat, cholesterol or sodium. They are good source of antioxidants, Vitamin C and Viramin A. Walnuts nourishes the dry skin and improve its texture. Walnut oil helps to prevent wrinkles and fine lines. Almonds are effective in treating acne. It also helps to maintain the cholesterol level and helpful for people who suffer from anemia. Eating dry fruits help to improve Hemoglobin levels. They are considered as a rich source of potassium, vitamin A fiber and copper and help in maintaining high energy levels. Dry fruits contain the right blend of unsaturated fats, vitamin B, phosphorus, copper and iron that are good for the proper functioning of the body organs.
Its a simple and yummy recipe that you can prepare it quickly.

Things Needed :

Walnuts : 1 Cup
Almonds : 1 Cup
Milk Powder : 2 Tablespoons.
Sugar : 11/2 to 2 cups
Ghee : 3/4 cup
Saffron : 2 to 3 Rakes.

Method :

1. Soak almonds in hot water and remove the outer skin. Grind it with little water til paste and remove from the mixture.
 2. Dry grind walnuts and keep it aside.

3. Put sugar in a big pan. Add 1/3 cup of water and mix sugar nicely and let it melt.
4. Keep this sugar mixture on the fire.(Low flame).
5. Add ground almonds, powdered walnuts and mix it well. Add a spoon of ghee.
6. Keep stirring until it thickens. Add ghee little by little.
6. Add milk powder and stir until it leaves the pan. 



7. Stir it turns as one ball consistency. Add remaining ghee and saffron rakes and mix it nicely.

8. Remove from the fire and put it on a ghee applied tray. Let it turn warm.
9. Cut them in to small pieces according to your wish and serve.

Note :

You can use milk to grind soaked almonds. See that not much of water or milk is added while grinding.
If the water or milk is more then you need to spend more time on stirring till it turns thick. (it takes more time to be thick
Adding more ghee is added to taste. Try it on low flame to get good burfi.
Time : 30 minutes.
Serves : At least 25 pieces. (Depending upon to the size of the burfi).
