Jola mattu Raagi Rotti.

Raagi means finger millet in English and Jola is millet . These food grains are very healthy and its a staple food    for Karnataka people ( Especially Jola is used as main food in North Karnataka and Raagi is used in Bangalore, Mysore Mandya side).

Jola and Raagi grains are very healthy .  Ragi and Jola Rotti  is good to  have for break fast or as evening snack.  It is  very good for all age group.
Things Needed :
Ragi Hittu - 1 cup
Jolada Hittu - 1 cup.
Rice Powder : 2 Table spoons.
Onions : 2
Green chilly : 2
Ginger : 1 /2  to 1 Tea spoon.( Grated).
Coconut : 2 to 3 Table spoons.
Salt : to taste.
Oil : 2 to 3 Table spoons.
Water : As required.
Coriander leaves: 3 to 4 Table spoons.
Curry Leaves: 2 to 3 Table spoons.
Cut onions , green chillies, curry leaves, coriander leaves  in to small pieces. Wash and remove the ginger skin , wash it again and then grate it.   Now take a big bowl and mix Raagi, Jola and Rice powders. Add salt, coconut , cut onions, curry leaves and coriander leaves. Mix it thoroughly and  then pour a cup of boiling water on it and leave it for cooling.  ( 10 minutes will do). Now mix nicely all the ingredients properly adding required water. The Rotti mixture should be soft. ( Do not add too much or too less water. The dough should be little more loose than the rice rotti dough).
Now keep a pan on the fire. Heat and sprinkle a spoon of oil and spread it around. Take a small hand full of Rotti mixture with a wet hand and spread it on the tava , wet your palm if required. .  Put a spoon of oil on the top and cover the lid. Cook for 2 minutes and turn the rotti to cook other side.  Cook for 2 minutes again and  remove the cooked rotti  from the pan and serve with  1 tea spoon of Fresh butter on the top with  Chutney or Sambar. Repeat the same to cook  remaining rottis.
Note : You can use a banana leaf piece to spread the rotti . ( Take a banana leaf piece as big as you want. Wash it and spread little oil all over the leaf. Take a handful of the Rotti dough and spread like dosa , using your palm and the fingers.  Keeping a bowl of water and dipping your hand in it to spread the Rotti will help the rotti to be thinner.  You can also add grated carrots, or Palak leaves to Rotti dough. The taste differ. Using boiling water will soften the cooked Rotti. Try to use less oil but while serving Serve with Ghee or Fresh butter to give a good taste of Raagi - Jolada Rotti.
3 to 4 serves.
